Nutella Coconut Bread

February 5th was National Nutella Day.  Unfortunately I didn't get a chance to make something for National Nutella Day.  But I did get to see quite a few nutella recipes.  A recipe for nutella coconut bread from Cathy Shambles at Showfood Chef sounded delicious and easy to make.

I actually did not have time to make this recipe, so I had Baby Bro help me make most of it.  The dough batter was surprisingly thick.  I thought it would be more liquidy.

The bread had a creamy, chocolate taste.  But the chocolate taste is pretty light.  The coconut adds a chewy texture.  This wasn't my favorite recipe.  The chocolate taste was too light for me, and it left me craving something with a stronger taste.

Nutella Coconut Bread (Adapted from Cathy Shambles)

Ingredients

3 cups Flour
3/4 cup Brown Sugar
1 Tbls. baking powder
1/2 cup coconut (toasted first)
1 egg
1/2 cup Nutella
1 cup Milk (skim or whole)
1 tsp. vanilla
salt to taste

Directions

1. Sift all dry ingredients together into a bowl (flour, sugar, baking powder, salt), then stir in toasted coconut.

2. In another bowl, beat together the egg, milk, Nutella, and vanilla with hand mixer.

3. Fold all ingredients together and pour into a loaf pan.

4. Cook in oven preheated to 350 F — for 55 minutes. Let cool for a few minutes in the pan before turning out.
