Hello Kitty Ice Cream Waffle Sandwiches

I once had these ice cream sandwiches that were served on two freshly made waffles. I loved it.  The hot, crispy waffles tasted great with the cold ice cream. So this weekend, I decided to use my Hello Kitty Waffle maker to make some ice cream sandwiches. For anyone who is curious where to get the waffle maker, there are some third party sellers that have it on amazon as well as ebay.

This weekend I also got a chance to use the ice cream maker I recently bought, for the first time. I chose to make some coconut ice cream because I found a recipe on David Lebovitz site which was really simple to make. I had all the ingredients necessary except the saffron threads, which I left out.

Making Hello Kitty Ice Cream Sandwiches ended up being a little trickier than I imagined, and next time I’ll have to make some adjustments. One of the problems is the waffles.  The Hello Kitty waffles are flat on the front side, but the back side has grids of normal waffles, except they extend out more than a typical waffle. So it’s hard to squish the ice cream into these grids and it makes it harder to hold the ice cream sandwich together because it becomes so thick (as you can see in the photo below). Next time I think I will cut off part of the backside of these waffles, so I have a flatter surface to work with.

The other problem I encountered was working with homemade ice cream, which melts really fast. These ice cream sandwiches were dripping like crazy. Next time I might just use store bought ice cream. Or I might freeze the homemade ice cream in hello kitty-like molds, so then I can transfer the ice cream molds directly into the waffles without having to scoop the ice cream and squish it to fit.

These still came out really cute looking and they were fun to eat on such a warm Saturday afternoon. Also, the ice cream was really good if you like coconut ice cream. I don’t think I’ll buy coconut ice cream again. I’ll just make my own.

For the waffles, I just used a Belgium waffle mix. For the ice cream, I used a modified version of this recipe:

Coconut Ice Cream

Prep Time: 15 minutes
Course: Dessert
Cuisine: American
Easy to make coconut ice cream that’s perfect for ice cream sandwiches.

Ingredients

  • 1 1/3 cup heavy cream
  • 2 cups coconut milk
  • 1/2 cup cane sugar

Instructions

  • In a medium-sized saucepan, bring all the ingredients to a boil.
  • Reduce the heat and simmer gently for ten minutes, stirring occasionally. Remove from heat, and chill the mixture thoroughly. (I put mine in the fridge overnight)
  • Once chilled, freeze in your ice cream maker according to the manufacturer's directions.

  4. I used Krusteaz Belgium waffle mix. It’s pretty easy to cook them evenly. There is a orange button and it will go off when the waffles are done, so that they come out evenly browned. I hope you enjoy yours. I love using mine! Make sure you spray enough oil so the waffles don’t stick.

  8. They are a bit thicker, which made it hard to make into ice cream sandwiches, so next time I’ll have to shave the backs. I love eating waffles this way though. So cute!!

  9. You should get one! I love my HK waffle machine. Out of all the hello kitty gadgets I have, this one is my favorite because it makes such nice hello kitty shapes!

  14. I’m loving homemade ice cream. I got a cuisinart one. I dont know if I have the patience for a hand crank machine, but I can see how your kids would like it!

  15. Hmm, I have a freezer chest. I’ll have to try sticking it in there. I don’t mind that it’s softer since it still has an ice cream consistency rather as opposed to the ice creams that don’t use a machine, but it does make it harder to photo.
    I think david lebovitz’ site had a different sugar alternative but I didn’t have it, so I didn’t include it in mine.

  16. Hi Faye! I put the ice cream as soon as I finished making my waffles. I don’t really like cold waffles. I think piping ice cream would be a bit hard to do and it would make the ice cream melt more. I just used an ice cream scoop and squished ice cream onto one of the waffles. But I was thinking next time, I might freeze the ice cream in pre-cut shapes that I can just quickly sandwich in between. Also I want to shave down the backs because they make the sandwich a bit unstable and a bit too tall.
    I think you can definitely substitute for whipped cream!

  18. What a riot! I’ve just started making home made ice cream with a White Mountain hand crank machine and the kids think it’s awesome.   19. Hello Kitty! What a great idea. I don’t have cane sugar but I have everything else. As a matter of fact, I made some Krusteaz Belgium waffles this weekend and froze some. I’ll have to dig out the ice cream maker and make some ice cream! Won’t be cute like these tho. 😉
    I also find that homemade ice cream doesn’t freeze like store bought either, unless you have a freezer chest. I have to put the ice cream in there for a couple of days to firm it up well.

    Can you clarify how you get the ice cream in there? Isn’t there a way to make the waffle, take them out, and then pipe some ice cream in there?
    I’m not clear on when you actually put the ice cream into the waffles.
    Oh! Maybe I can put fresh whipped cream inside! Like a cream puff or something!?
