Mango Ice Cream

Homemade ice cream doesn’t have to be complicated and this mango ice cream is a great example. You only need three ingredients and an ice cream maker to make it. It’s fast, fresh and so much better than store-bought.

Since getting my ice cream maker I’ve been amazed at how many easy ice cream recipes there are to make. I always assumed you have to make a custard-based ice cream and I’m not quite ready to tackle those more complicated recipes.

I’ve made several easy recipes, like my blueberry sour cream ice cream, and now I’ve come up with my own! This mango ice cream is my own creation and I love it – the flavor is so fresh and you only need three ingredients to make it. I hate that artificial mango flavor you get with store-bought versions so now that I can make it myself, I’ll be making it homemade from now on.

Ingredients

You will need frozen mango cubes. You can buy them already frozen or you can do it yourself. Just cube a fresh mango, place the pieces on a baking sheet and freeze them for about 30 minutes or so.

For the sugar, you can adjust the total amount based on how sweet your mango is. If you are using pre-frozen cubes you will probably need less sugar. If you use fresh mango that you freeze yourself you may need to add a little more.

You will also need heavy cream which gives the ice cream it’s rich flavor and creamy texture.

Recipe Steps

  • Place all of the ingredients in a blender or food processor and puree them together until smooth.
  • Pour the mixture into an ice cream maker* and churn it following your model’s instructions.

Once the ice cream is done churning it will be pretty soft. I like to transfer it to a container and freeze it for a few hours so it’s firmer.

Ingredients

  • 2 cups frozen mangoes cubed
  • 1/2 cup sugar or more to taste if your mangoes aren't that sweet
  • 1 cup heavy cream

Instructions

  • Mix mangos, sugar and heavy cream in a food processor until smooth.
  • Pour mixture into ice cream maker, following manufacturer's directions. Serve with slices of fresh mango.
