Fancy Flourless Chocolate Mug Cake

Flourless chocolate cake in less than 2 minutes. And you can plate it so no one even knows it was made in a mug with a microwave.

I mentioned in my Flourless Nutella Mug Cake post that I got the idea for that recipe from a flourless chocolate mug cake recipe. So of course I had to check out the original. Unlike all the other mug cakes I’ve made, these cook up into almost perfect cylinders so you can pop it out and it looks very fancy.

You can dress it up with some powdered sugar but I left my plain and served them with some strawberries. The cake tastes just like a baked version of flourless chocolate cake. Not the kind that has the lava center, but still really good.

I have to admit, I like the Nutella version better because I’m such a Nutella addict but the chocolate version is pretty good too. And the nice thing about this dessert is the presentation. You can serve it at a dinner party or to a loved one and let them think you slaved away in the kitchen when in fact it takes less than 5 minutes.

The original recipe is meant to make 2 cakes, but I know some people find it a hassle to split an egg and divide all the ingredients into two mugs. So I tried making it as a single serving without having to split an egg or any ingredients and it still worked. Also, I simplified instructions, to make it almost all one step and it also still works. My version doesn’t end up with the self-serving sauce, but it still tastes good.

Fancy Flourless Chocolate Mug Cake

Ingredients

  • 1 egg beaten
  • 1/2 tsp vanilla extract
  • 1 tbsp heavy cream
  • 2 tbsp cocoa powder
  • 2 tbsp sugar
  • 1/4 tsp baking powder
  • 1 tsp oil

Instructions

  • In a coffee mug, combine the egg, vanilla, cream, cocoa powder, sugar, baking powder, and oil.
  • Place the mug in the microwave and cook it for approximately one minute and 20 seconds, or until the middle of the cake is cooked which you can check with a toothpick.
  • To plate, turn the mug over on a plate to remove the cake. Serve warm.

  1. Made this for Valentine’s Day for my husband and I I had cut two strawberries to look like hearts and added reddi-whip in a floral pattern. For a person who rarely eats desserts, he “Loved it”!  I will definitely make them again. Thanks for a great recipe. 

  2. delicious, easy recipe i’m definitely holding onto. instant espresso and salt deepen the flavors, if you have them on hand, but it’s great without. i also usually swap out the cream for greek yogurt (best) or oat milk, and either have worked fine for me.

  3. This is a great recipe to pull out when you’re craving something sweet. It has a nice chocolaty flavour, but the texture isn’t dense, rich and fudgy like a traditional flourless chocolate cake. It’s light and slightly airy. The only change I made to the recipe was to add a pinch of salt and instant espresso. The cake was done in 1 minute in my MW.

  4. WARNING: DO NOR DOUBLE RECIPE ? I double the recipe because my mugs are extremely large and I thought it wasn’t enough. Unbaked, the mug was filled a quarter of the way but once in the microwave, it was double the height of the mug! but SO delicious! 

    For anyone wondering if you can substitute the heavy cream, I used 2% milk because it’s all I had and it worked great ? 

  5. Unbelievable how amazing this recipe is. It is perfect, in every way possible. The only down side is that this is so easy to make that this can be really addictive! All that skepticism and now this is a favorite!

  7. Wow! I was very skeptical about the egg as the main ingredient. I’m not a huge egg fan to begin with, but this didn’t taste eggy at all! Very impressed! I too am eating low carb, low sugar so I substituted the sugar for a TBLS or Allulose and a bit of liquid Stevia. It had a nice, rich, chocolatey flavor with a spongey cake like texture. I will definitely use this again. Thanks for the recipe!

  8. Will it still work without baking powder

    • You need a little bit of leavening for the cake to puff up. If you leave it out it the cake might be denser and flat.

  9. This is absolutely delicious! I am newly gluten free for my endometriosis and I stumbled upon this recipe. I am shocked at the wonderful texture that this mug cake has. Thank you for giving me a little sweet to look forward to every once and a while! 🙂 Also the deep chocolate flavor is spot on !

  15. Great recipe. Easy and quick to make with little mess to clean. Only substitution I made was to flavoring; I used half vanilla extract and half Almond Liquor. It is true, heavy cream is the key to a great flavor cake. I wouldn’t make it without the heavy cream. It makes it taste Soo Good!!!

  17. I just wanted a flourless quick dessert tonight with the ingredients in my fridge. I used stevia instead of sugar, and a splash of milk instead of cream, plus I added a tiny bit of sugar free caramel sauce. It turned out great! Moist and a bit gooey underneath which I love. I sprinkled with coconut and more caramel sauce 🙂 thank you!

  18. I’ve tried many mug cakes but this might be the best. Perfectly cooked, supremely moist and comes out of mug with no problem. I followed the ingredients completely, only substituting sugar for no-carb Swerve. I love the ideas for add-ins and will do those next. This is amazing with a glass of red wine. 🙂

  19. Needed low carb.  Used half n half and stevia.  Seemed a but dry, so I put a tsp of half n half on top of the hot cake and it was perfect.  Thank you!

    • I’m glad you got it to work for you. I sometimes find that no sugar sweeteners will make the cakes a little dry if I do a direct substitution, so I usually have to adjust the other ingredients as well. This is probably why your cake felt a little dry. But I’m glad you got it to work.

  21. Hey what would you think of trying to use hot cocoa mix instead of the power and sugar? I have swiss miss because I love hot chocolate but I dont make cake often so it would probably just sit in my cabinet unused.

  23. I made a 2-ingredient nutella chocolate soufflé I found on the Tasty app. I was on a keto diet so I looked for a flourless mug cake and found your recipe. It was delicious! I just made the mistake of using a not-big-enough vessel so next time I will definitely use an actual mug!

    • I do not currently have the information for that. But there are many websites out there that let you calculate the nutritional information for any recipe.

  29. I made this for my husband and myself and we loved it. He is diabetic so I used Stevia and I am allergic to gluten and dairy. It worked really well using Stevia and almond ilk instead of the cream. We will have it again.

  30. I was looking for a chocolate mug cake low in carbs. Found this recipe and tried it. I was not disappointed. My husband loved the bitter chocolate taste. I didn’t have heavy cream so I used half and half and it didn’t turn out eggy at all. This recipe is a keeper!! Thank you for posting it.

  31. I struggle to find good recipes on fourless chocolate mug cakes…This was nice but I think they all need flour. Tastes wayyy to eggy, almost like a chocolate omelet.

    • i didnt think it tasted eggy at all. Did you make sure to use heavy cream? It makes a diff compared to using milk or something else.

      • I love this recipe. I started making flourless mug cakes after forgetting to buy flour one shopping trip and never went back. I have made this recipe many times and always loved it. I found I preferred it a tad sweeter and add an extra 1/2 TBSP of sugar. This also cooks perfectly with add ins, tonight I greased the cup and put some blackberry halves on the bottom of the cup, covered that with some peanut butter melted with butter, and then the mug cake recipe poured on top. Flip onto a plate and top with powdered sugar – seriously out of this world. Thank you for the fantastic versatile recipe!

    • My batter was just a bit thin so I added a Tbsp of coconut flour.  Turned out great!
