Hot Chocolate Cookies

What are hot chocolate cookies? They are all the things you love in a hot chocolate drink but in a cookie form. Chocolate cookie, with a gooey chocolate center, topped with a melted marshmallow.

I saw these cookies on A Full Measure of Happiness. Unfortunately, the exact post is no longer on the blog, so I had to recreate my own version of the recipe.

These were fun cookies, especially with the toasted melted marshmallow on top. I do wish I picked a chewier chocolate cookie base. I’ve been in the mood for a chewy cookie lately.

The middle of the cookie has a piece of chocolate that melts when baking. As a warning, make sure you let these cookies cool before eating. I learned the hard way. The melted chocolate center was burning hot…

Hot Chocolate Cookies

These cookies are all the things you love in a hot chocolate drink but in a cookie form. Chocolate cookie, with a gooey chocolate center, topped with a melted marshmallow.

Ingredients

  • 1/2 cup unsalted butter
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1/4 cup unsweetened cocoa powder
  • 1 cup + 2 tbsp all-purpose flour
  • pinch salt
  • 1/2 tsp. baking powder
  • 12 square pieces of chocolate about 1/2 inch long
  • 12 large marshmallows

Instructions

  • Preheat the oven to 350°F. Line baking sheets with parchment paper or silicone baking mats.
  • Cream the butter and sugar on medium-high speed until light and fluffy. Mix in the egg. Mix in the cocoa powder at low speed until well blended.
  • Add the flour, salt and baking powder to the bowl and mix on low speed just until incorporated.
  • Make round cookie balls about 1 1/2-2 inch in diameter. Place the ball onto the cookie sheet and use the palm of your hand to flatten ball. 
  • Make a shallow well in the center of the cookie and place a piece of chocolate in the center. Place marshmallow on top, pressing it in slightly. Make sure your well is wide enough to hold the large marshmallow so it doesn't spread off the cookie when baking. Repeat with remaining cookies, make sure to place each cookie about 2 inches apart.
  • Bake about 10 minutes until done. Serve after cookies as cooled or else the melted chocolate center may burn your mouth.

  1. what a clever idea!! this sounds really great. what would happen if i dipped a hot chocolate cookie into hot chocolate? might i die from the sugar rush, or just be really, really happy?
