I was browsing through the ice cream aisle at the grocery store when I came up with the inspiration for this mug cake. I love the java chip ice cream flavor by Starbucks and thought it would be fun to recreate it as an easy mug cake.

A sweet coffee cake base, sprinkled with mini bittersweet chocolate chips. I topped it with some heavy whipped cream and additional chips to resemble the ice cream.

I was really happy with how this mug cake came out. The cake had a strong coffee flavor but was also very sweet. The whipped cream looked like soft serve ice cream.

Java Chip Mug Cake

Yield: 1-2

Prep Time: 5 mins

Cook Time: 1.5 mins

Total Time: 6.5 mins


5 tbsp flour
5 tbsp sugar
1/8 tsp baking powder
1/2 tsp espresso powder
1 egg
3 tbsp milk
3 tbsp oil
2 tbsp mini bittersweet chocolate chips

1 cup heavy cream
1/4 cup sugar


1. Mix everything except chocolate chips into an oversized mug until batter is smooth. Sprinkle chocolate chips on top of batter. Cook in microwave for about 1 minute 40 seconds. Outside of batter may appear wet but the inside should be cooked. Let cake cool a little before frosting.
2. While cake is cooling, whip the heavy cream and sugar on high speed until peaks form. Put into piping bag and pipe onto cake. Sprinkle with additional mini chocolate chips.

    ahhhh!!! another mug cake i will be making soon!! i just bought espresso powder at W&S and luckily java chip is one of my favorite drinks from starbucks too! thx kirbie

    I just bought Medaglia D’ Oro Instant Espresso Coffee at Vons with the intent of making your mocha mug cake. Now I have to make the java chip mug cake, too. I haven’t tried the cakes yet because I have baked goods at home to finish first. I would think the instant espresso coffee should work fine; it’s a lot less expensive than the Williams Sonoma espresso powder.

      Interesting. I’ll have to get the instant espresso coffee next time I’m at Vons. It probably is less expensive than the WS one, though I bought the WS one a long time ago and it’s lasted me forever since you only ever use like 1 tsp in a recipe at most.

    Could the flour in this be substituted with almond or cocont flour???
