S’mores Brownies

If you have a box of brownie mix in your pantry, you are going to want to make these s’mores brownies. They start with boxed brownie mix but are dressed up with crushed graham crackers and toasted marshmallows on top. They are ooey-gooey, chocolaty, and so easy to make.

I’m not sure why but I had the biggest craving for melted marshmallows and other S’mores-like treats this weekend so I decided to make s’mores brownies. Chocolate, marshmallows and graham crackers baked up as brownies sounded so good.

I didn’t have a lot of time so I cheated and used boxed brownies. I always keep a stash in my pantry so I can make a batch of brownies quickly if I get a craving. I was so happy how these turned out and they were so easy I’d definitely make them again.

Ooey-Gooey S’mores Brownies

This recipe is seriously sweet, gooey, with all the yummy things in a s’more. There’s the chocolate from the brownie, the graham crackers are crushed and mixed into the batter, and the marshmallows are toasted on top.

I really love how the toasted marshmallow looks on each piece of brownie. And when you bite into the marshmallow, it gives this little swish sound. These didn’t last long. FH started in on the plate the second I put down my camera. I had to secretly stash away two for my friend before they were all gone.

Baker’s Edge Brownie Pan

I baked my brownies in my Baker’s Edge Brownie Pan*. If you love the chewy corner pieces of brownies, I highly recommend you invest in this pan or request it as a gift. My siblings are so spoiled, they won’t even eat brownies baked in a regular pan anymore. In addition to each piece having edges, I like how each piece of brownie bakes evenly and is sturdy when I cut it, whereas in a regular pan sometimes the middle pieces fall apart.

You can also use a regular 9×13″ baking pan to make these s’mores brownies, too.

If you want a quick and easy brownie recipe you will really like this one. Even though they’re made with brownie mix they seem fancier with all the toasted marshmallows and graham crackers. I hope you enjoy them!

This recipe is seriously sweet, gooey, with all the yummy things in a S'more. There's the chocolate from the brownie, crushed graham crackers mixed into the batter, and melted toasted marshmallows on top.

Ingredients

  • 1 box brownie mix or your favorite brownie recipe
  • 1 cup graham crackers crushed with hands
  • 12 large marshmallows

Instructions

  • Preheat oven to 350°F. Grease a 9 x 13 pan or brownie edge pan. Make brownie batter according to recipe or box instructions.
  • Crush graham crackers with hands so that they still have relatively large chunks. Mix into the batter and stir.
  • Pour batter into greased brownie pan. Place marshmallows on top, spacing evenly so that when you cut brownies into squares, each one will have a melted marshmallow in the center. Bake for 30 minutes until knife inserted comes out clean. Let completely cool before cutting and serving.

  1. Hey, so I was thinking about making this for my coworkers last day of work, are they a “straight out of the oven” type of dessert or can I make this the night before?

    • Yes you can make these the night before. I saved some for a friend and gave it to her the next day and they were still good.

    • Haha, yeah probably not a good idea to look when you’re hungry. I’m pretty happy with how the marshmallows turned out.
