Mini Bacon Pancake Muffins

I really liked the sausage pancake cups I made a few weeks ago. It combined my favorite breakfast items into one easy portable form.

FH requested them again, but I decided to make a different variation: bacon. And I made use of my mini muffin pan too. These bite-sized treats are perfect for breakfast, a snack, or any time really.

Pancake mix muffins with bits of bacon inside. And a side of dipping syrup. Yummy. I’m not sure which version I liked better.

Mini Bacon Pancake Muffins

Servings: 24 muffins

These savory bites are perfect for breakfast or as a snack.

Ingredients

  • 1 cup Bisquick
  • 1 egg
  • 1/2 cup milk
  • 4 slices precooked bacon

Instructions

  • Preheat oven to 350°F. Grease mini muffin molds. Mix Bisquick, egg and milk in a large bowl with a whisk. It's okay to have some remaining lumps.
  • Dice precooked bacon into small pieces. Mix about 2/3 of the pieces into the batter. Pour batter about 1/2 full into each muffin mold. Sprinkle a few bacon pieces on top. Bake for approximately 10 minutes until knife inserted comes out clean.

  1. Does the baking time need to be increased from 10 minutes to 15-20?

  2. may i ask, what was the texture of the precooked bacon and how did you cook it? was it crispy or tender? did you cook it in a stove top or oven? 🙂

    • I buy precooked bacon at Costco. It’s cooked all the way through but not yet super crispy, so when you heat it up, in the oven or whatever recipe, it will then crisp up

    but what is Bisquick? Is it something like special,
    or ‘just’ a pancake-mixture?

    • Bisquick is a very popular brand of pancake/biscuit/waffle mix. But you should be able to make it with any pancake mix.

  4. These are great! I only used 2 strips of bacon, since it was all I had, but they were still delicious! I love this idea, and I’m thinking of trying it with chocolate chips.

  5. Nice! I was recently wondering if I can bake Bisquick in a muffin pan. Will this work with the Heart Smart mix? Can’t wait to try this…with blueberries. 🙂
