Sausage Pancake Cups

Mini pancake cups filled with sausage bits. Favorite breakfast items wrapped into one. Dip it in some maple syrup and you have yourself a deliciously yummy breakfast/brunch item.

I came up with the idea when my mind wandered off during work. I was thinking back to my bacon pancake egg cups and was wanting something even simpler. I was really craving pancakes and sausages so I came up with this.

You can use any pancake recipe, but I used Bisquick to make this even quicker. Next time I’ll have to double the recipe.

Sausage Pancake Cups

Cook Time: 15 minutes

Mini pancake cups filled with sausage bits are two favorite breakfast items wrapped into one. 

Ingredients

  • 1 cup Bisquick
  • 1 egg
  • 1/2 cup milk
  • 4 precooked frozen breakfast sausages

Instructions

  • Preheat oven to 350°F. Grease 8 muffin/cupcake molds. Mix Bisquick, egg and milk in a large bowl with a whisk. It's okay to have some remaining lumps.
  • Pour batter about 1/2 full into each muffin mold. Slice precooked sausages into 6 sections per sausage. Place three on top of batter for each pancake muffin mold. Bake for approximately 15 minutes until knife inserted comes out clean.

  1. Is there a reason you “need” Bisquick? What I mean is, can I use my homemade pancake batter? I’ve never been a fan of Bisquick, myself.

  2. I make these and sometimes even in my mini muffin pan! I disk per. Put it in first, then add batter. Perfect bite sized portions!!

  4. These look so good and simple to make! When you put the sausage into the cups, did you already brown them and then put into cups?

  5. I think this appears to be a great brunch recipe. I think for presentation effect, I’m going to try filling part of the way with the pancake mix and then add some sausage and then add the remainder of the pancake mix over that . It would kinda be a surprise inside when dipped and bitten into. Just a thought.

  6. This is a great recipe…can’t wait to try it! And I WILL be putting them in the freezer (if there are any left over!) so my kids can take them out and heat throughout the week. We put regular pancakes in the freezer, too…

    • I’ve never put pancakes in the freezer. I’m going to have to try next time and reheat. It does make things simpler!

    • Hmm. I didn’t try it but I think maybe no. Just because I don’t know how good fresh pancakes taste after they’ve been frozen.
