Avocado Chips

So I have some good news and some bad news about this recipe. I got this idea to make homemade avocado chips. I’ve made homemade potato chips and I’ve seen homemade chips made from other fruits and vegetables.

The good news: They actually crisped up; I was afraid they would be too moist and buttery to turn into chips, but they do. They also kept their bright green. And I even managed to avoid turning on the oven for hours by using the microwave as a shortcut.

Now for the bad. If you’ve ever cooked avocados before, you know that when you heat up avocados, they start to develop a bitter aftertaste. It’s quite strange actually. Initially, your tastebuds are filled with the buttery avocado, but then after you swallow, the bitterness creeps up on the back of your tongue.

The bitterness doesn’t bother me too much because I’m used to many bitter Chinese vegetables. I even eat bitter melon. But I know a lot of people are not okay with the bitterness. So that’s the flaw with these.

I tried to fix it. I googled it, to see if it was possible to cook avocados without having them turn bitter. I didn’t find any solution. I tried dousing them in lemon juice before cooking them. That helped a little. It took some of the bite of the bitterness. Though I found that the best way to distract from the bitterness is actually coating them with chocolate. But I guess that sort of eliminates the healthy aspect of these.

Anyways, I wanted to share the recipe regardless. Because they are edible and they look pretty. But I needed to warn you there will be a bitter aftertaste, which you can mask with some lemon and maybe some other spices, or dip them in chocolate.

I haven’t quite figured out why you can bake avocados in sweet treats with no problem. Maybe someone else can enlighten me.

These avocado chips are easy to make and don't take long at all since you cook them in the microwave. They do have a bitter aftertaste, which doesn't bother me but please be aware in case you are sensitive to bitter flavors. I offer some tips to mask the bitterness in the recipe in case you want to try them.

Ingredients

  • 1 ripe avocado
  • lemon juice optional
  • chocolate sauce optional

Instructions

  • Cut the avocado in half and remove from shell. Slice lengthwise, in thin slices, about 1/2 cm thick.  
  • If using lemon juice to detract from some of the bitterness, squeeze fresh lemon juice on both sides of the avocado slice before placing on a microwave plate. Otherwise, just place on the plate. Make sure pieces do not overlap on the plate. You may want to make these in at least two batches.
  • Microwave for 3 minutes. Check on doneness. They are done when they are completely dried and hard to the touch. Snack on them as is or dip in chocolate sauce to remove more bitterness.

  1. I am going to dehydrate my avocados today . Some I will spray with lime juice & some with out . Will let you know how they turn out !!!

  2. Thank you for this. Information! I made with different ingredients. What workded best was lime juice and sugar. I sliced avocados and put them in the bowl with lime juice and sugar. Cook them the way you said and sprinkled salt. This was the best result with the bitterness. The one I mixed with lime juice, sugar and garlic salt, and cooked, had bitter flavor. I wish I could found something better instead of sugar to make it healthier. 

  3. I find that, for me,  avocados have that aftertaste even when uncooked and the reason why I don’t eat them. Dousing them in some kind of balsamic vinegar dressing, or even mayonnaise seems to help, but this sort of defeats the point of eating healthfully. This is the first time I have seen someone else mention that phenomenon. 

    • hmm, perhaps your tastebuds are hypersensitive to the avocado flavor profile. for me, they usually taste fine except when cooked too long

  4. My husband and I were wondering if you drizzled honey on them if it would help. Honey is good for you, and in small quantities it might be okay. I’m going to try it and I’ll let you know. Thanks for the tip.

    • Yes, but it will take longer. And as I mentioned, these do have a bitter aftertaste because the avocado has to be in the heat for a while to turn into chips.
