I’m not usually good at coming up names for recipes, but this one came to me easily.
If you are the kind of person to cry over spilled milk, this recipe may not be for you.
But even with the spilled milk, it’s delicious. And super easy. I took the 5 Minute Mug Macaroni and Cheese recipe and combined it with a four ingredient macaroni and cheese recipe. Rather than cooking the macaroni noodles in water first, I directly cooked them with milk in the microwave. The recipe is ready in about 4 minutes.
When cooking the noodles in the microwave, the water will boil over. The same thing happens with the milk. Hence the name.
It’s a little bit more of a mess to clean up, but not too bad. And it’s not too much milk if you use a big enough mug. Another alternative may be to place the mug inside a plate or bowl so that the milk spills into there rather than directly onto the microwave floor.
I don’t think I’ll ever need to buy instant macaroni and cheese again.
1/3 cup elbow macaroni
1/2 cup lowfat or skim milk
1/2 cup shredded cheddar cheese
Pour elbow and milk in an oversized mug. Microwave for 2 minutes. Milk will spill out during cooking so you may want to be something underneath the mug to catch the milk. Stir and check. If there is still a lot of milk and noodles are not cooked, microwave at additional 30 second intervals. Mine was down at 2 minutes 30 seconds. Add in cheese and stir. Microwave for an additional 20 seconds and then stir until cheese is fully mixed in with the noodles.
