Pizza Stuffed Mushrooms

These three-ingredient stuffed mushrooms are a twist on a pizza without all the carbs. The mushrooms are stuffed with cheese and pepperoni for a fun bite-sized snack that’s great for game-days or parties.

I love easy appetizers for game-days and parties and recently I made these stuffed mushrooms. I made them for Labor Day and they turned out so well I’ll be making them all fall.

I see a lot of stuffed mushrooms with goat cheese and other ingredients, but I happen to love mushroom pizza so I thought I could just skip the pizza dough part and just bake up some mushrooms stuffed with my favorite pizza toppings, which happen to be pepperoni and cheese.

These pizza stuffed mushrooms are so easy – you only need three ingredients to make them.

Ingredients for Stuffed Mushrooms

Mushrooms: It’s best to use larger mushrooms so you have more surface area to work with. Costco sells the oversized mushrooms for a really good price. I used brown bella mushrooms and I removed the stems before stuffing them.

Pepperoni: I love mini pepperoni, but if you can’t find them you can use regular-sized pepperoni slices and cut them into smaller pieces.

Mozzarella cheese: It’s best to use low-moisture mozzarella cheese instead of fresh mozzarella. Fresh mozzarella releases moisture when it heats up and could make your stuffed mushrooms soggy.

To make the stuffed mushrooms, all you do is fill the mushrooms with the cheese and top them with some pepperoni. Bake them at 350°F for 10 to 15 minutes or until the mushrooms are cooked and the cheese is melted.

The mushrooms will release some moisture as they bake, but I didn’t find this to be a problem. I love the combination of the mushrooms, pepperoni and cheese – just like pizza without all the carbs!

Once the mushrooms cool off a bit you can easily pop a whole one in your mouth. They’re a great snack or appetizer.

These stuffed mushrooms are super easy and tasty. They're also a great way to enjoy pizza while cutting down on the carbs.

Ingredients

  • shredded mozzarella cheese
  • mini pepperonis
  • oversized mushrooms

Instructions

  • Preheat oven to 350°F. Wash mushrooms and remove stems. 
  • Fill mushrooms with shredded cheese and top with 3-4 mini pepperonis. Place on baking sheet. 
  • Bake for approximately 10-15 minutes until mushrooms are cooked. Serve immediately.

  1. 5.Also in glassware it needs another 10 ins to brown completely.

    6.Keep bigger mushrooms towards the edges if you’re cooking for a bigger group or with different sized leftovers

  2. I’ve tried this recipe and would like to offer some tips.

    1.Adding salt and pepper to the cheese helps a lot.Maybe that’s self explanatory but in my first try I made it without them and it was really bland.If you’re feeling adventurous a bit of oregano helps.

    2.Do NOT grease/spray the baking tray.I’m a novice with mushrooms and didn’t realize greasing the tray tends to make them soggy.

    3. It works well with ham and salami.In case the pepperoni/cold meat is too big for the mushroom or the mushroom is too small you can make a double layer with mushroom-meat-cheese-meat-cheese.

    4.Also putting a small piece of meat in the mushroom with the cheese helps.It allows the cheese to absorb the salt of the cold meat.

    All in all, an easy recipe for novice cooks.Takes very little time (depending on your oven’s pre-heating time).It took me 30 mins,took my friend 20 mins.microwave version would be a great idea for college students.
