2 Ingredient Soft Thin Mint Cookies

I continued to play around with my Girl Scout cookies with this easy recipe. I love Thin Mints as they are, but I just knew they would be perfect for one of my two ingredient cookie recipes, turning these cookies into another cookie form.

You get the taste of thin mints, but in a soft cakey cookie form. Yummy.

This recipe is super easy. All you need are crushed Thin Mints and an egg to act as the binding agent. It takes just a few minutes to mix up the “batter” and then it’s ready to go in the oven.

2 Ingredient Soft Thin Mint Cookies
Yield: 8 cookies
Ingredients:
20 Thin Mints, finely crushed in a food processor
1 large eggDirections:
1. Preheat oven to 350F. Line two baking sheets with Silpat mat or parchment paper.
2. Whisk egg in a bowl. Add in crushed Thin Mints, mix with a spoon until egg fully coats all the cookie crumbs. This will be a little messy. Take 2 tbsp of dough and compact between hands and form a ball. Place onto baking sheet and gently smash down to form a round disk about 1/3 inch thick. Repeat with remaining dough, placing cookies about 2 inches apart.
3. Bake for 9-10 minutes until cookies are puffed and set. Let cookies cool on tray before removing and eating.
