Banana Cinnamon Chip Mug Cake

Yes, I’ve been obsessing over mug cakes again recently. I wanted to revisit the banana one because while I already have a banana mug cake recipe, it’s one of the recipes where I wasn’t quite satisfied with the results.

I wanted to create a lighter cake because the banana one I previously made was very dense. Going along with my simplified versions of mug cakes, I eliminated the egg and oil. Without the egg yolk, the cake comes out quite pale, but it also doesn’t have any “eggy” taste to it.

To give it something extra, I added in mini cinnamon chips. I love how the cinnamon chips melt into the cake, giving it mini pockets of cinnamon goodness.

Banana Cinnamon Chip Mug Cake

This mug cake is very easy to make and doesn't have any egg or oil. Without the egg yolk, the cake comes out quite pale, but it also doesn't have any "eggy" taste to it. 

Ingredients

  • 4 tbsp all-purpose flour
  • 1/2 tsp baking powder
  • 1/8 tsp cinnamon
  • 2 tbsp mashed ripe banana (see note)
  • 2 1/2 tbsp sugar
  • 3 1/2 tbsp fat free milk
  • 1 tbsp mini cinnamon chips

Instructions

  • Mix together flour, baking powder, cinnamon, mashed banana, sugar, and milk into a microwaveable mug with a small whisk until smooth. Stir in the cinnamon chips, leaving a few to sprinkle on top. Microwave for about 1 minute. Surface of cake should be dry. Let cake cool for about 1/2 hour before eating.

Notes

  • You will need approximately 1/2 of a banana. Keep in mind that 2 tbsp of mashed banana is more than 2 tbsp of whole banana. Just like banana bread, the riper the better for the banana.

  1. I tweaked the recipe a bit. Added a little less sugar and one heaped teaspoon of nutella instead. No cinammon and few walnut chunks. It was a delightful banana chocolate walnut cake. You are genius ! 

  2. First time for me to make a mug cake and I’m not disappointed. Sadly theres quite a bit of uncooked batter at the bottom, even though I cooked it for 1 minute then 2 times 30 seconds and then another 10 seconds, because the top wasnt set yet. The cooked part was really pretty good though 🙂

    • You might want to try a diff mug. Some of the mugs I’ve had, they have issues cooking evenly. I’d suggest a wider mug. Glad you enjoyed the cooked parts though!

  4. I looooooooooove this mug cake. When my friends decided to leave Alexandria, Egypt & return back to France, I looked up the recipe of whole bread here as well! An EPIC success with everyone! I’ve just tried the Banana Mug cake & it is neither tasty nor successful as this one.

  6. This is perfect for us because my toddler always gets full right when he gets to the last few bites of banana. Instead of just eating it up, I can make this quick and easy banana cake. Yum!

    • Oh that is perfect! I’ve been trying to figure out what to do with the rest of the banana. I usually just eat it after I’m done making the mug cake.

  7. how is it that a microwave bakes in 1 min but an oven takes 20min? is it bc microwave is radiaiton while oven is heat ?
    …and it has to cool for 30 min ? WOW.

    • Microwaves use much higher power, cooking things much faster. Similar to if you heat food in the microwave versus heating in an oven. It cools for 30 minutes to let the cake set and develop a deeper banana flavor

  8. I’ve never heard of a cinnamon chip. Sounds delicious! What is it? I’m picturing a white chocolate chip with cinnamon in it. Do you find them at a regular grocery store?
    This mug cake looks particularly delightful! I’ll have to try it, regardless of whether I can find cinnamon chips or not. Thanks for sharing!

    • What you’re thinking is basically what it is, though the entire chip is a tan color rather than white. You can find them at most baking supply stores and some grocery stores. Certain brands carry them like Hershey’s and King Arthur Flour.
