Pancake Mug Cake

Do you ever just want a single serving pancake? I do all the time. I’ll be desperately craving a pancake, but too lazy to mix up the batter and make a whole batch on my griddle.

This single serving microwave mug pancake solves my problems. One fluffy pancake ready in less than a minute.

I made it in a mug, but because it doesn’t rise as much as a cake, it would be hard to see in the mug. So I used a spoon and it easily popped out. You can also make it in a ramekin instead of a mug since it is so small.

Of course I had to drizzle it with some syrup and add some strips of bacon. I used the precooked Costco bacon to keep it super easy.

This version uses Bisquick. I’m working on trying to make one with all purpose flour so stay tuned. The mixing goes much faster with Bisquick because you don’t need to get rid of all the lumps, just like when you are mixing traditional pancake batter.

Do you ever just want a single serving pancake? This single serving microwave mug pancake is the way to go. One fluffy pancake ready in less than a minute.

Ingredients

  • 1/4 cup Bisquick
  • 1 oz fat free milk 1/8 cup

Instructions

  • In a microwave safe mug or ramekin, whisk Bisquick and milk with a small whisk for a few seconds. It's okay if small lumps remain. Heat in microwave for about 1 minute. Let pancake cool slightly before scooping out of mug and serving with syrup.

  3. Could you add vanilla protein powder to this? I’m guessing it would need more liquid than the recipe calls for?

  4. I tried this recipe with birthday cake pancake mix and it worked very well. It went over the top of the mug and made a little mess, but other than that it was fine and tastes great! Love this! 🙂

  6. Would this work with other pancake mixes? I only got White King Hotcake Complete Mix with Maple Syrup.

  7. I made this with Pamelas Gluten Free pancake mix 1/4 cup and 1 oz almond milk. As directed. It is wonderful and light. Delicious!

  8. If you add a heaping scoop of chocolate milk mix, it will turn out delicious and chocolaty. Make sure to mix the bisuik and milk mix first, before adding the milk. Makes mixing much easier. Chocolate chips are created too! Strawberry milk mix/syrup makes it super sweet and a lot like a cake.

  10. If you put some chocolate milk mix in, you get a nice chocolaty flavour. You just need to mix a little long or add a drop more of milk.I believe it also works if you replace the milk with chocolate milk.

  13. I don’t have bisquick but it worked great with the krusteaz mix. I’ve tried microwave pancakes before in plastic food storage container and it turned out horrible. This time I dumped some mix in the bottom of a mug, added water and as usual it was too much so i added more mix and got it thick. By now the mug was half full so I spooned out about half into another mug and did it for 1 minute @ full power and it was good but the bottom half or so was barely doughy from not being cooked long enough. I did the 2nd mug 1:15 and it came out perfect! Put the butter on top with a little syrup and it was grrreat! I think what makes it cook better in a ceramic mug is when the mug heats up it helps cook the pancake like a little oven. This puffed up alot in the mug with 1/4 of the mug being batter to start. I’d suggest start with a quater mug of batter than later when you see how much the batter rises you can add more to make it a full mug when done cooking. The microwave I have in my apt is a large range hood one with a lot of power so you may need to add a little more time if your microwave is smaller.

    Because I have a good appetite I also like making one LARGE pancake in the oven with a round metal cake pan…which worked a lot better when I had a gas stove cause nat gas has water in it so it makes cake super moist in the oven. I haven’t tried a large pancake in this electric oven yet. One trick I heard is to put a small pan of water on the 1st one or two racks so it will be moist in the oven and not dry the cake out. My preference is to just make one large 8″ pancake in the oven in the cake pan, 15 minutes and done. Which means you can also cook a nice omlet and some bacon or sausage without also having to tend to pancake batter & flipping before they get over done. One oven pancake is enough to feed 4-6 people depending on appetite and what else is being served. I’ve ate a whole one with a few eggs in one sitting, but that’s if I’m really hungry and know that it’s gonna be awhile til the next meal.

    I book marked the site so I can come back and check out the other quick meal ideas…well for me probably more of a snack….I’m nowhere near being overweight which is why people are surprised how much I can eat…if it’s cooked right so I won’t get food poisoning I’ll eat pretty much anything
