Guinness Stout Chocolate Mug Cake

St. Patrick’s Day is just a few days away so I wanted to share another St. Patty’s themed recipe.

I posted a Guinness Chocolate Mug Cake last year made in adorable mini beer glasses, but I’ve since tweaked the recipe, and I wanted to share this new and improved version. It’s got a simpler list of ingredients, it’s eggless, and it has a better texture too.

I love the pairing of chocolate and stout beer. The stout brings out the bitter notes in the chocolate, giving it a coffee-like flavor.

Since I was working with Guinness beer, I decided to cook the cake it in a giant beer mug. I ended up doubling the recipe to fill the mug, though it didn’t quite reach the surface. Of course the problem of doubling the recipe is that I ended up eating the whole thing… Damn my lack of self-control when it comes to chocolate.

The chocolate cake isn’t too sweet because I really wanted the stout flavor to come through. You can add a little more sugar if you want something sweeter.

  1. Holy Smokes – yum!!
Would look really good with some Baileys/Cream concoction on top to represent the actual stout.

  2. I will be making this mug cake this weekend! Now all I need is some Guinness!!!

    • I hope you like it! It’s not too sweet because I realized when I made it sweeter you couldn’t taste the guinness at all. And if you try to add too much guinness the batter gets gummy. But I thought this was a good compromise. Chocolaty with a little bit of the bitter stout finish.
