Microwave Nutella Cookie

This easy Nutella cookie cooks in under one minute. It’s soft and cakey and full of chocolate and Nutella flavor.

I needed this cookie today. Okay, maybe I didn’t need the three I actually inhaled. This is the problem with easy recipes.

It’s been a long, not-so-great day. I won’t bore you with the details. I just really want the weekend to be here.

I realized I haven’t made a microwave version of a Nutella cookie since my first attempt a few years back. I had originally planned to make one for the upcoming book, but I had so many Nutella recipes in there already, so I left it out.

This Nutella cookie came out soft and cakey. It tasted delicious, especially since it was still warm with melty chocolate chips on top. Next time I’ll work on a more firm version, but this really hit the spot.

Microwave Nutella Cookie

This easy Nutella cookie cooks in under one minute. It's soft and cakey and full of chocolate and Nutella flavor.

Ingredients

  • 1 tbsp unsalted butter melted
  • 1 tbsp Nutella
  • 3 tbsp all purpose flour
  • 1 tbsp brown sugar
  • 1 tbsp whisked egg
  • 1 tbsp chocolate chips

Instructions

  • Line a large plate with parchment paper (The parchment paper will keep the cookie from sticking. You need a large plate to keep the cookie stable and to let it spread as it will spread out quite a bit.) Melt butter in a small bowl or mug. Add in remaining ingredients except chocolate chips. Mix with a whisk until batter is smooth.
  • Using a spatula, scrape cookie into a big lump into the middle of large plate lined with parchment paper. The dough will be wet and sticky so try to handle only with the spatula. Slightly shape the cookie dough so it is evenly spread and round. Drop chocolate chips on surface.
  • Cook for 50 seconds (don't cook for longer as it will overcook the cookie). Let cookie cool for a few minutes before eating.

  2. I used 1 tbsp peanut butter as a substitute for the tbsp of egg because in an medium egg there is three tbsp and three tbsp of peanut butter equal an egg

    For ones who have wondered,
    yogurt can be substitute for egg(1:1 Ratio), and it taste equally yummy.

  5. This is a great recipe!! I added a sprinkle of toasted pecans and added half peanut butter chips and half chocolate chips and mixed together equal parts to equal a tablespoon of Nutella and Peanut Butter together.

    Fabooo!

  9. Fantastic recipe. We didn’t have any chocolate chips in the house so I used mini Smarties on one cookie (yum!) and put about a handful of raspberries on another (a winner among the four of us. Loving the sweet/sour conflict and the contrast between the warm cookie and the chilled berry.) Will definitely make this again.

  11. I think I added too much butter because the cookie didn’t harden and I even tried blotting it before putting it in the microwave 🙁 

    But the more I microwaved it past 1 min, it started BUBBLING! I was so freaked out, I just took it out and ate it as dough… Hopefully, the flour cooked!

  15. I just found your blog and I love it so much! Definitely trying this recipe soon. Could you explain the whisked egg part? Do I just whisk some egg whites until they’re firm and measure it out to a tablespoon?

    • No, it’s much easier than that! A whisked egg just means that the egg yolk and egg white are lightly mixed together like you’re making a scrambled egg, and then you use 1 tbsp of that.

    I don’t know what happened but I did everything but it went black and spattered all over the microwave! Can you please tell me what is wrong? I did everything right, I’m positive!
    Also, can you make a diet mug cake recipe? I’m trying to lose weight but I really can’t because I keep making your mug cakes. 🙁

    • hmmm i’m not quite sure. did you use parchment paper at the bottom and not waxed paper? i am just checking since a lot of people confuse the two. or perhaps you have a really super powerful microwave that just cooked the cookie too fast. perhaps you can try lowering the power setting on your microwave. did it splatter from the start or at the end? i’m not sure why it would turn black. i made this recipe several times and it’s never come close to splattering. and from the comments, several readers have also made the recipe with no issues.

      as for diet recipes, i have made several lower calorie recipes. my favorite is probably the 3 ingredient chocolate ice cream mug cake, which is less than 200 calories. https://kirbiecravings.com/2013/08/3-ingredient-chocolate-ice-cream-mug-cake.html I also recently made several more under 200 calorie ones but they are being reserved for my new book.

  18. A good alternative to chocolate chips is spreading a bit of Nutella on top! Other than that this recipe is super yummy!!

  21. Just tried this recipe! It tastes really good and (as you said) cakey. Sadly, mine looks pretty ugly though unlike yours. Will be waiting for the firmer version (and will definitely try!).

    • glad you liked it! i am def working on a firmer version too. Hmm, as for the shape, I piled all my dough in the middle of a large round plate lined with parchment paper. when it cooked, it just spread out pretty evenly across the plate.
