Lemon Blondies

These simple lemon cake bars are sweet and tart and perfect for people who love lemony desserts.

I hope everyone had a great weekend. Mine was filled with activities, from delicious meals, to ice cream donut sandwiches, seeing good friends, and getting a new haircut. What is it about a haircut, that your hair looks so shimmery and new after, but you can never quite replicate the look again no matter what you do? I’ve tried taking notes, buying the same products and tools as my hairstylist and nada. It never again looks as bouncy and pretty as the first day right after the salon.

So now I just take a picture and look back on it fondly until the next haircut.

On Sunday, I attempted to make a chewy lemon blondie but it didn’t quite work out. I wanted to flavor the cake with natural lemon juice and the added liquid kept the batter from developing a chewy texture. But these still taste good and maintain quite a bit of tartness from the lemon juice, so I thought I’d share them just the same. Like all blondie recipes, this batter comes together quickly and then off into the oven it goes. Less than 30 minutes later and you have a pan of lemon flavored blondies.

Lemon Blondies

These lemon flavored cake bars and sweet and tart.

Prep Time: 5 minutes

Cook Time: 25 minutes

Total Time: 30 minutes

Ingredients:

1/2 cup butter
1 cup packed light brown sugar
1 cup all purpose flour
1 large egg
2 tbsp lemon curd
1/4 cup fresh squeezed lemon juice

Directions:

1. Preheat oven to 350F. Grease or line a 9 x 9 baking pan with parchment paper. Cream butter and sugar until light and fluffy. Add in flour, egg, curd and lemon juice and mix on medium speed until smooth dough forms.
2. Scoop dough into 9 x 9 baking pan and spread evenly across entire pan with a spatula. Dough will be very sticky. Don't worry if you can't smooth out top because once it begins to cook in the oven, it will smooth out. Bake 25-30 minutes until blondies turn a golden brown and toothpick inserted comes out clean. Let blondies cool completely in the pan before cutting and serving.

    Ooh I’ll have to try out this recipe. I have way too many lemons right now (but who could resist buying them when they looked SO PRETTY?!? haha) and have been thinking of new ways to use them! 
    I also got a haircut this weekend, haha! There’s definitely something magical about the way they style it at the salon – even though mine was just a simple blow-dry, I can never blow-dry it to look the same way again.

      yeah, even the blow dry part–mine never looks as good. hehe. i know what you mean about lemons. usually i complain i dont have any but right now i have a giant fruit basket filled and i needed to use them up!
