2 Ingredient No Bake Keto Peanut Butter Cookies

These low carb and keto-friendly no bake peanut butter cookies are just 2 ingredients! They don’t require any cooking or baking and take about 5 minutes to make. They are a quick and easy snack.

These cookies are so easy to make and you can make some ahead of time to snack on. I love eating one or two when I’m in the mood for something a little sweet. They are like energy bites but in cookie form.

Ingredients

  • Natural Peanut Butter
  • Lakanto Sugar Free Maple Flavored Syrup

Looking at the ingredient list, you might be thinking, this is just sweetened peanut butter. But it isn’t. Sweetened peanut butter is gooey and sticky and requires a spoon or other utensil to eat it with. These cookies have the same texture as unbaked cookie dough and can be picked up with your fingers. When the syrup mixes with the peanut butter, it transforms it into a cookie dough consistency.

Peanut Butter

This recipe only works with natural peanut butter. This is peanut butter that has only peanuts in the ingredient list (and maybe salt). This recipe will not work with peanut butter processed with hydrogenated oils.

Sugar Free Syrup

I used Lakanto sugar free maple syrup. While this is not the only syrup that will work, you do need a syrup that has a very thin consistency (almost like water). If you are not on the keto diet, this recipe also works with genuine maple syrup. However, it will not work with any thick and sticky syrups that have a honey-like consistency. For example, ChocZero’s maple flavored syrup will not work.

Cookie Texture

Baking No Bake Cookies

Yes you can bake these cookies. When you bake them, the cookies will lose their moisture and be more crumbly. They taste a little like a biscuit cookie and are a little plain but edible. I didn’t particularly love the baked version, which is why I’m sharing the no bake version. I have made a baked version with real maple syrup which I did enjoy. However, with the sugar-free syrup they were a bit dry and less buttery.

2 Ingredient No Bake Keto Peanut Butter Cookies

These no bake peanut butter cookies are just 2 ingredients and take about five minutes to make. They make a perfect quick and easy snack.

Ingredients

  • 1/2 cup natural creamy peanut butter unsweetened
  • 1 - 1 ½ tbsp Lakanto maple flavored syrup

Instructions

  • Line a cookie sheet with parchment paper.
  • In a medium bowl combine peanut butter with 1 tbsp syrup. Use a spatula to stir the syrup into the peanut butter. At first the peanut butter will become more liquidy as your stir in the syrup. However as you continue to mix it in, you should see the peanut butter seize and thicken and become a cookie dough consistency. Mix in the syrup until it is completely incorporated. Start with 1 tbsp of syrup and taste the dough after it is mixed in. If it's not sweet enough, you can add another 1/2 tbsp. Do not add too much syrup because it will make your dough soft and sticky.
  • Scoop 1 tbsp of dough and place onto prepared cookie sheet. Repeat with remaining dough, spreading cookies 1 inch apart. Use the back of a fork to make crisss-cross patten on cookies. Cookies can be enjoyed right away. They can also be refrigerated for 30 minutes which will make them slightly firmer. Store uneaten cookies in the fridge in an airtight container.

Notes

  • Recipe can be doubled if you want to make more cookies.
  • These cookies are meant to be slightly sweet and salty and not super sweet. After you mix in the 1 tbsp of syrup you can taste the dough and add another 1/2 tbsp if it is not sweet enough for you. You want to avoid adding too much syrup because it will start to make the cookie dough too moist and sticky.
  • This recipe will only work with natural-style peanut butter. Please read post for more details why. You can also substitute with other nut butters like almond butter, cashew butter but make sure it is natural style. If you are looking for a nut-free substitute, you can try sunflower seed butter.
  • You can use other sugar free syrups but they must have a very thin, water-like consistency similar to Lakanto maple flavored syrup. Thick and sticky syrups like ChocZero will not work.
  • Estimated nutrition provides total carbs and net carbs. The net carbs count excludes fiber and carbs from erythritol. If you are on a keto diet, please remember to look at net carbs and not just total carbs.
