How to Make Shrimp Stir Fry

Learn how to make shrimp stir fry with snow peas and mushrooms. Stir-frying is a simple and quick cooking method and it’s so easy you don’t even need a recipe. Just a few simple ingredients and few basic steps create a delicious stir-fry you can make in no time at all.

One thing I love about stir-fry is that it’s one of those dishes that you don’t really need a recipe to make it. My mom made a lot of stir fry dishes and they were usually very simple like this shrimp stir fry I’m sharing today. Not all stir fry dishes need a sauce – in fact, a sauce can sometimes overwhelm the delicate flavor of the shrimp, so for this one I didn’t use one.

Along with the shrimp, I added some fresh snow peas because they have been on sale lately at Ranch 99.  I enjoy eating them, and they are great in this dish.  With this quick-cooking method, they retain their beautiful color and stay crisp. I also added mushrooms and baby corn – it’s a really great combination of flavors.

Ingredients

The thing I like about stir-fry dishes is that you don’t really need measurements and you can cook as much or as little as you want. You can also add the ingredients to your taste, so if you love mushrooms you can add more or if you want a lot of shrimp you can adjust the amount. So, feel free to experiment.

  • For this stir fry, I like to use the 26/30 or 31/35 count raw shrimp that are peeled and deveined because they tend to shrink a lot in size when you cook them. The numbers refer to the size of the shrimp and how many individual shrimp are in a pound. So, 26/30 means there are 26 to 30 shrimp in one pound which means they are bigger than the 31/35 count shrimp. So, the bigger the numbers, the smaller the shrimp are.
  • For the snow peas, just make sure they are very fresh. The color should be vibrant green and the pods should be crisp.
  • I like to use whole mushrooms for stir fry and slice each in half so I have large pieces of mushrooms. You can slice them thinner or by the pre-sliced mushrooms to save some work.
  • I also added some canned baby corn that I drained and rinsed.

How to Make Shrimp Stir Fry

Stir-frying is a very quick cooking method that is done using a wok. If you don’t have a wok you can use a large pan with taller sides. You just want to have plenty of space for the ingredients to cook.

For this stir-fry, I don’t include a sauce so it’s very quick and easy to prepare. Once you have your shrimp, mushrooms, snow peas and baby corn it only takes a few minutes to cook them.

  • Heat up a wok or frying pan with some oil. Once heated, add in the raw shrimp.
  • Stir the shrimp. When shrimp begin to turn pink but are not yet completely done, add in the snow peas and mushrooms.
  • When the shrimp are done (they will be pink and opaque) and the snow peas are almost cooked, add in the baby corn and some salt to taste.  Stir for about another minute and then remove from heat and serve.  You want to make sure you don’t overcook the snowpeas otherwise they will turn soggy.
  • Enjoy with a nice bowl of steaming rice!
