One Minute Brownie Mug Cake

Yes, that’s right. I created a brownie mug cake that takes only one minute to make in the microwave. I have to confess, I’m pretty thrilled. This is my favorite mug cake creation yet. And it is still super easy to make.

It’s super chocolatey like a brownie should be. This is more like the cake-type brownies rather than the chewy brownies, but it’s still so good. When it first came out of the oven, the brownie was quite fluffy, like a really good chocolate cake. After a minute or so, the batter turns denser, much more like a brownie because of the minimal amount of flour.

I made two, offered one to the FH. At first he refused. He’s gotten kind of sick of my mug cake creations. I insisted he take a bite and he didn’t regret it. He loved it and kept the brownie for himself.

Because brownies are denser, these don’t rise nearly as much and you don’t need an oversized mug unless you want to double the quantity. A regular mug will do.

There’s one extra step required to create these cakes, but it’s still super easy and clean up is still minimal.

You don't need to wait to bite into a warm homemade brownie. This brownie-in-a-mug takes just minutes to make and is a chocolatey treat for two.

Ingredients

  • 2 oz semisweet chocolate chips or chopped chocolate
  • 2 tbsp unsalted butter
  • 1 egg
  • 4 tbsp sugar
  • 2 tbsp flour

Instructions

  • Select two microwave-safe mugs. In each mug place one tbsp of butter and 1 oz of semisweet chocolate. Microwave each mug for 40 seconds (microwave them separately). Remove and stir until chocolate is completely melted with a small fork.
  • Add 2 tbsp sugar to each mug and stir. Beat egg in a small bowl, add half to each mug and mix. Add in 1 tbsp flour to each cup and mix until smooth.
  • Cook each brownie for 1 minute in the microwave (do each separately). Serve while warm.

    • The butter and chocolate are melted first in the microwave. Once you mix the batter in each mug, microwave them one at a time to cook the cakes.

  12. I love this recipe! It’s so easy and I’ve made it so many times. I clean while it’s microwaving then I eat it! It’s absolutely delicious, it is hard to clean the mug after but totally worth it.

  16. Hi! I’m not sure what I’m doing wrong, I made the recipe, I put everything in 1 mug (a bigger one) and then put it in the microwave for 2 mins. It came out really wet and sticky. Do I leave it in for longer? Bacause last time I did that, it came out all rubbery. 🙁

    • This recipe is designed for 2 individual cakes. You should divide the batter into two mugs as stated in the instructions and cook each separately. Adding them all into one will make the batter too dense when it is fully cooked.

Plus, i’m not stuck with a whole batch justin waiting to be eaten day by day.   22. loved this recipe! made it at home in only 5 minutes! the texture was a little spongy, but i think that was only because i added too much egg to my mug. other than that, tasty and easy!

  24. Lovely basic recipe it supresses my midnight snack craving. I added .5 oz more chocolate than the recipe but I figured it would be harmless. I’m not sure if I didn’t cook it long enough or it was the extra chocolate but I think next time I’ll add a little more flour and maybe some vanilla.

  25. Can I use brown sugar and mix it with the white?

    • I recommend making the recipe as is and then you can try diff versions and see how it compares. brown sugar will change the texture of the brownie.

Seeing as I made this at 2 am, with nobody to share it with (Bummer…NOT!), I used a bowl for the double serving ( took 2min instead of 1 no biggie) and having no semisweet chocolate (not a fan of semisweet chocolate) I used a regular milk chocolate bar i had, kept everything else the same and it turned out AMAZING!!!

  31. I absolutely adore this recipe.  I have a serious cinnamon addiction, though, so I substituted half of the chocolate for cinnamon morsels.  The result was glorious, especially after I added more on top of the hot brownie.

  32. How many tsp of chocolate (aprox.) is 2 oz? 

    • Not sure..also I don’t think you’re going to get a very accurate measurement using tsp with chocolate chips, especially with their irregular shape, which is why I always weigh it out

  34. Being more of a chocolate fiend than sweets, I make this with 70% dark chocolate, 1.5 Tbsp sugar, and add splash of vanilla and salt and it comes out and it comes out dangerously good and easy.

  51. Great base recipe! I was craving cream cheese swirl brownies, and I only wanted to make one serving, so what I did was melted a little more than a tbsp of chocolate chips with 1 tbsp butter, then added 1 1/2 tbsp sugar and half of the egg, then added 1 1/2 tbsp flour. I also added just a splash of vanilla extract and a dash of salt. With the other half of the egg, I added 1 oz cream cheese and 1/2 tbsp of sugar, mixed that well then swirled it in with the brownie mix. Microwaved for 2 min. INCREDIBLE! Thank you for the inspiration 🙂

  57. Is it possible to substitute the egg for something else? I was telling a friend of mine the amazingness of this recipe, but due to religious believes, she doesn’t eat eggs. So is there any way to make this with out the egg or replace it with something else?

    • I honestly don’t know the answer to that. I’ve never made brownies or cakes without eggs before. There may be a way, but I haven’t tried it.

  59. I tried with cocoa powder instead of chocolate chips. I should have added more liquid to compensate for the extra dry ingredients. It came out a bit dry and cakey (still edible for sure though). As a stroke of genius though, I put in a werther’s original and the area surrounding it was something special!

  62. I tried to make just one serving and i used a whole egg for one cup. it came out kind of blobby but kind of cakey after i put it in the microwave for another 3o secs. I also added a little more flour because i thought it would help with the egg. Maybe i’ll stick to the recipe next time.

    • I think a whole egg is a little too much for this recipe and you have to double everything. Perhaps you try putting it all into one oversized mug if you dont want to divide the egg

  63. I tried it and it’s so good the only problem was I didn’t have any semi sweet chocolate so I used dark, and so it’s not that sweet but next time I will try it with the right kind

    • I’m sorry to hear that. Without watching what you did, it’s hard for me to say. What do you mean by a blob? Did it cook thoroughly? Is it hard? I’m wondering if it is something with the microwave time. I’ve made this many times with no problems.

    • This is a delicious brownie and the recipe is so easy it is fantastic! My cousin that is 12 made it for her family. It takes about 4 minutes in tota to finish the whole thing with cooking. It was yummy and chocolatey. I loved it especially with ice cream!! One thing id recommend is putting some coffee powder (decaf for kids) and that might help Bc it can be too sweet sometimes 
      But overall I was really impressed 

    • I tried to make it in a lower-powered microwave and I had to triple the cook time. If your microwave is below the standard wattage (which is common in dorms and other small communal spaces) you may need to zap it a bit longer. Try giving it a break halfway through to make sure it doesn’t burn.
