Hot chocolate mug cake

I haven’t abandoned my easy microwave mug cake series. I just took a short break because I didn’t have any ideas that really inspired me. Then when I was working with marshmallows for S’mores brownies, it made me think of hot chocolate. And that’s how I came up this hot chocolate mug cake.

The mug cake uses hot cocoa mix in the batter. You can throw some marshmallows into the batter too which will melt into the cake. And I added a few more marshmallows on top to more resemble hot chocolate.

I was pretty pleased with how this came out. Light, fluffy, and you could taste the hot chocolate flavor. This would be perfect any time of year, though I’m excited to make it during the winter.

Hot Chocolate Mug Cake

Cook Time: 1 minute

Just like hot chocolate except in an easy-to-make mug cake form! This mini cake takes just minutes to make in the microwave.

Ingredients

  • 4 tbsp all purpose flour
  • 4 tbsp white granulated sugar
  • 1/2 tsp baking powder
  • 1 egg
  • 2 1/2 tbsp hot cocoa mix
  • 3 1/2 tbsp milk
  • splash of vanilla extract
  • 3 1/2 tbsp oil
  • mini marshmallows optional

Instructions

  • Combine all ingredients except mini marshmallows in an oversized coffee mug. Whisk well with a fork until smooth. Add 4-5 mini marshmallows into batter if desired. 
  • Microwave on high for 1 minute 30 seconds. Check to see if done by inserting knife and seeing if middle of cake is done. The outside of the cake even when fully cooked will look wet and slightly gooey. This is normal. If it needs longer, cook for an additional 30 seconds. Mine was done at 1 1/2 minutes. You don’t want to overcook it or it will become rubbery. You also want to keep in mind that the cake will continue to cook a little in the cup while it is cooling. Add additional mini marshmallows on top and let cake cool slightly before eating.

  3. I didn’t like this cake it taste nasty and like oatmeal. Very disappointed with this. Sorry but it wasn’t good! 🙁

    • it sounds like you didn’t mix everything completely. If you don’t have a smooth batter, you will end up with chunks of flour. As you can see by the comments, many people made it and it came out fine.

  10. Mine tasted like rotten eggs…
    I added golden syrup and it masked the flavour but not the smell of rotten eggs
    not nice

    • I’m not sure why yours would end up tasting like that. As you can see from the comments, other people have made it successfully.

  11. This was definitely one of the best regular ol’ chocolate mug cakes I’ve had, but WOW was it unhealthy! lol I thought it’d be about half the calories, carbs, etc. that it was! It was a lot though, so I saved half for later. Thanks for sharing!

    • It makes quite a lot so yeah I would definitely just eat half at a time. Though it actually is about the same calories and fat as regular cake. It’s not worse than regular cake. And it doesn’t have frosting so if you normally eat frosting, then it’s actually less. =)

    • I really liked this too! I didn’t realize how quite unique the hot cocoa flavor is compared to regular chocolate.

  15. I bought marshmallows the other day just for this!! I love your mug cakes!! I actually mixed one up the other day and split it in half, putting the other half in a mug in the fridge to make it the next day! The only thing easier than a mug cake is a mug cake that’s already mixed and ready to be nuked.

  16. This is very yummy, but my oversized coffee mug must not have been oversized enough. I had a bit of a volcano! Put the next batch for hubby in a bowl and it did much better, but did take 2 1/2 minutes. I think I’ll split this between two regular mugs and see if that size works. I’ll definitely find a suitable cup because the flavor is great!

    • I’m glad you liked it though sorry to hear about the overspill. I’m not quite sure how many ounces my oversized mugs hold, but it’s quite a bit more than my standard mugs, so I definitely recommend you try splitting it into regular mugs next time and cooking them separately if you don’t have one really big oversized mug.
