I first made pumpkin dinner rolls for Thanksgiving last year and, as much fun as it is to try to play around with my favorite pumpkin recipes and create new versions, I still like to make the original classics, too. So last weekend, I remade the original pumpkin spice bread rolls I fell in love with. Everyone loved them last year so I thought I’d share them here since I’m thinking about serving them for Thanksgiving again this year.

Lightly spiced, super fluffy, these bread rolls are the perfect accompaniment to a Thanksgiving feast or any dinner really. You can eat them plain, stuff them with proteins or veggies, use them to mop up sauce, the possibilities are endless. Plus, there’s nothing better than fresh-baked bread rolls for a holiday dinner.

Tips for Making Pumpkin Dinner Rolls

  • Plan ahead: This dinner roll recipe is a yeast-based recipe which means the dough needs rise twice. Once after you mix the dough and again after your form the dough balls to make the rolls. In total the rolls need three hours proofing time.
  • Use a stand mixer: You can, of course, make dinner rolls and knead them by hand but a stand mixer fitted with a dough hook makes it so much easier. If you knead the dough by hand it may take longer.
  • Use pumpkin puree: You can find canned pumpkin puree in the baking aisle. Be sure to buy puree and not pumpkin pie filling which has other added ingredients like sugar, so double-check the label.

Can I make dinner rolls ahead?

You can make and bake homemade dinner rolls a day in advance. Once baked, cool the rolls and then store them in an airtight container. You can serve them as is, or warm them in a low oven before serving.

Can I leave out the pumpkin and make regular rolls?

This recipe is for pumpkin rolls, so if you leave out the pumpkin they may not turn out right. If you want plain dinner rolls you might like my Butter Rolls or 30-Minute Buttermilk Rolls.

Lightly spiced, super fluffy, these bread rolls are the perfect accompaniment to a Thanksgiving feast or any dinner really. You can eat them plain, stuff them with proteins or veggies, use them to mop up sauce, the possibilities are endless.

Ingredients

  • 4 3/4 cups all-purpose flour
  • 1 tsp cinnamon
  • 1 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1/3 cup brown sugar
  • 1 1/2 tsp salt
  • 1 tbsp instant yeast
  • 1 (15-oz) can pumpkin puree
  • 2 large eggs
  • 1/4 cup butter melted

Instructions

  • Combine all of the dough ingredients, and knead them with the dough hook attachment on your mixer for five minutes. Dough will still be sticky. Transfer the dough to a lightly oiled bowl, cover the bowl with plastic wrap, and set it aside to rise for 1 1/2 hours. It will expand, but not a huge amount.
  • Turn the dough out onto a lightly floured surface, divide it in half. Working with the half dough, divide into 9 pieces. Roll the 9 pieces of dough between your palms until they are smooth round balls. Place balls into a 8 x 8 baking pan lined with parchment paper. Repeat process with other half of dough, placing balls into another baking pan. Cover both pans with a proof cover or lightly greased plastic wrap, for about 90 minutes.
  • Bake the bread in a preheated 350°F oven for 30 minutes.

  4. Can you tell me of a substitute for a “can of pumpkin” please – I live in UK.

    • It’s a can of pumpkin puree. I don’t know how to substitute that in the UK other than making your own, but it might not be the same consistency as the canned version.
