3 Ingredient Peanut Butter Cup Cookies

These chocolate peanut butter cookies are made with three ingredients: peanut butter cups, an egg, and baking soda. All you do is mix them all up in a food processor and then bake the cookies. They taste like peanut butter cups but in chocolate cookie form.

Do you love peanut butter cups? As a child, my favorite candy was peanut butter cups. It is what I coveted most from the stash of Halloween treats I collected every year and I could eat several in one sitting.

Flourless 3-Ingredient Peanut Butter Cup Cookies

Of course, eating them straight from the wrapper is great but I also love to use them in baking. I’ve used peanut butter cups to make cookies before, but those had mini cups mixed in like chocolate chips. For these cookies, I wanted to do something different.

I’ve been experimenting with a lot of easy cookie recipes and these are no different. You don’t need any flour for these – just three ingredients: peanut butter cups, an egg, and baking soda.

It’s hard to believe but you can use those three things to make cookies that are a little crispy on the outside and chewy on the inside. They taste like a peanut butter cup, but in cookie form.

Ingredients

  • Peanut butter cups
  • ½ of a large egg
  • Baking soda

You only need ½ of an egg for this recipe. The easiest way to divide it is to lightly beat it first and then measure out half of the whisked egg for the recipe.

Recipe Steps

For this recipe, you will need a food processor to mash the peanut butter cups. You could probably do it by hand by finely chopping the candy first and then mashing it in a bowl with a potato masher. I haven’t tried it but expect that it would work – as long as it’s turned into a paste it will work. It will just take longer by hand.

After eating four in a row (eek!), I thought I’d use some up for baking. I made these easy three ingredient cookies using the candy that taste great. Crispy on the outside and slightly chewy on the inside.

With a food processor, all you do is place the candy inside with the chopping blade and process them until they form a paste. Add the egg and baking soda and process again to mix everything together.

Scoop two tablespoons of the dough to form each ball and place them on a baking sheet two inches apart.

Bake the cookies for 10 minutes at 350°F. They will puff up as they bake but will sink down as they cool. Cool them completely on a baking sheet before removing them.

For as simple as these are, they are really good. It’s hard to tell they’re only made with three ingredients and no flour. They have a lightly crispy outside and chewy inside. If you want a fun way to use up peanut butter cups this is a good recipe to try.

These peanut butter cookies are so easy to make with just three ingredients!

Ingredients

  • 12 peanut butter cups
  • 1/2 of large egg
  • 1/4 tsp baking soda

Instructions

  • Preheat oven to 350°F. Mash peanut butter cups with a food processor until a smooth paste is formed. Add in 1/2 of an egg and baking soda and mix until batter is smooth. 
  • Take 2 tbsp dough and roll between palms until smooth balled is formed. Place onto baking sheet lined with parchment paper. Repeat with remaining dough, spacing 2 inches apart.
  • Bake for 10 minutes. Cookies will initially be puffy, but will sink down when cooled. Let the cookies cool on the cookie sheet until flattened before removing.

  78. Oh man. I have seen these PB cups at CVS and have always wanted to try them, but I dont usually buy candy. The idea of a candy without partially hydrogenated oils or HFCS appeals to me, because these ingredients have been linked to high cholesterol and diabetes. If I got these PB cups, I would stow them in my work drawer and eat one every afternoon when I need a pick-me-up. My office always has some sweet snack like cookies, brownies or cakes on the communal table. These PB cups would be a great change/addition to our usual work treats. My lab/office loves to eat and I am sure everyone would appreciate these!
