Chocolate Baileys Mug Cake

St. Patrick’s Day is almost here so it’s time for some boozy recipes. I made a Baileys Irish Cream Mug Cake previously. This time, I thought I’d add some chocolate to it.

You can still taste the alcohol, but it’s a little hard to tell that it’s Irish cream. I wish I had some Irish cream chocolate chips to add some extra oomph. The cake still tastes good though. Like chocolate cake for adults.

I have a few more Baileys’ recipes I want to play around with but first I need to restock.  We had a huge bottle in the fridge but apparently someone (DH) has been slowly drinking it down and when I went to make this cake, I barely had enough for one try.

Chocolate Baileys Irish Cream Mug Cake

Ingredients

  • 4 tablespoons all purpose flour
  • 4 1/2 tablespoons white granulated sugar
  • 1/2 tsp baking powder
  • 1 egg
  • 2 1/2 tablespoons unsweetened cocoa powder
  • 3 tablespoons Irish cream
  • 1 tbsp milk
  • 3 1/2 tablespoons oil

Instructions

  • Mix all ingredients in an oversized mug with a small whisk until batter is smooth. Microwave for about 1 1/2 minutes. Check the bottom of cake to see if it's cooked all the way through. If not, microwave for an additional 30 seconds. It's okay if the top remains a little gooey. Careful not to overcook the mug cake.

  1. I make SO many mug cakes (many from you) and knew there was a recipe using Irish cream. I’ve never commented on a recipe before but wow this was amazing!! I ruined it by giving it 30seconds too long but at least I know for next time. Thank you so much for your recipes!!

  2. This was perfect! It did rise above the rim of my 16 ounce mug, but it stayed within it. There is the exact ratio of Bailey’s to chocolate flavour, and I can see myself making this one often. Two minute was perfect for done-ness and texture. Thanks for sharing!

  3. Lovely and soooooooooo easy to do. Nice spongy texture with a chocolate Baileys cream flavour. The portion was too large for me tho but perfect for sharing. Will definitely do again and try out the other flavours. Thanks

  4. my boyfriend and i were in need of a pudding and came across your mug cake recipes. we’ve just made a rum chocolate version, amazing! we can’t believe we’ve never made these before!

  5. how is amug cake more caloric than a size cake? i’d think they’d be the same as the mug has depth to a reg pices of cake’s widthdepth.

    • I meant to say that some of these mug cake recipes are not the equivalent to a similar sized slice of cake. For example, normally an entire cake may use just 3 eggs, but some of these mug cakes require an entire egg even though the size is maybe 1/12 of a cake. So it uses a higher ratio of ingredients than 1/12 of a regular cake. But I have some reduced fat and calorie ones that are equivalent to one serving of cake or less if you browse through the mug cake recipe.

    • I love mug cakes and the personalized size too. Though I will warn you, some of these cakes, like this one, have quite a bit more calories than if you were to take a slice of a regular cake. If you’re looking for lighter desserts, I have may reduced fat and calorie versions of many of my mug cakes.
