3 Ingredient Skinny Lemon Cake

I’ve been working on trying to make skinny lemon brownies. So far, I’ve failed twice at creating something close to what I have in mind, but I did manage to create this delicious, fluffy lemon cake. And it’s only 3 ingredients.

I was able to slice these into 20 decent sized servings (about the size of a brownie), which equals approximately 114 calories per square slice.

All you need is Duncan Hines Lemon Supreme Cake Mix, nonfat plain Greek yogurt, and water. This cake is easy to assemble and ready to go in the oven in minutes. And you really don’t miss the eggs or oil at all.

Ingredients

  • 1 box Duncan Hines Lemon Supreme Cake Mix
  • 1 cup plain nonfat Greek yogurt
  • 1 cup water

Instructions

  • Preheat oven to 350°F and grease a 9 x 13 baking pan.
  • Combine cake mix, yogurt and water, and mix on medium speed until batter is mostly smooth. Pour into pan. Bake for approximately 30 minutes or until toothpick inserted comes out clean.

    Wow! So tired of people constantly picking on minor details!!!!. Love those cakes. I did sugar free one to reduce the points. Thanks for sharing

I have made this cake several times and it is delicious everytime, people are being to critical about the ingredients yes the cake mix has other ingredients, but just think about the ones that add the calories and fat that you are not adding to the mixture so no need to be so picky. I have made the sugar free chocolate mix and vanilla cake mix and strawberry, they have all come out awesome. I make an icing using lite cool whip and sugar free, fat free instant pudding with just a little fat free milk mixed with the pudding and once set fold in the cool whip and it makes a great icing. I have also used fat free cream cheese with the cool whip and instant butterscotch pudding, so good. I am making the lemon cake with the icing for my husband’s birthday cake!

  4. I made this but used mini muffin pan. Baked at 350 for maybe 12 minites and they are delish!

  7. Ok you got me….I saw 3 ingredients and I thought “what?” lol Cake mix actually has a LOT of ingredients in it though!

    • This is true. I didn’t mean to deceive but cake mix is one ingredient listing. I mean many “ingredients” have multiple things in them like peanut butter, nutella, etc. I am working on making one from scratch that I hope is very few ingredients without the use of cake mix.

  8. 3 ingredients? What about all the ones in the cake mix 😉

    • Yes, you are right, technically cake mix has a lot of stuff in it already, but it’s just “one item” you need rather than several. Perhaps I should call it 3 item lemon cake? It’s always hard to figure out how to properly define an ingredient. Peanut butter, Nutella, also have multiple ingredients inside too.
