Watermelon Sorbet in Lime Shells

Watermelon sorbet is a refreshing summer dessert. For a fun presentation, serve the sorbet in lime rinds. They look like sliced mini watermelons and are great for entertaining.

Isn’t this an adorable way to serve watermelon sorbet? The sorbet on its own is so refreshing and perfect for summer, but serving them in hollowed out lime shells makes them so great for entertaining. Who could resist trying one?

I’m so excited that it’s almost summer. I don’t even know why since I just have work as usual. But my head is full of summer recipe ideas lately including this cute watermelon sorbet in lime shells. These are perfect for a party, BBQ, or just a regular summer day.

I love watermelon and making this sorbet is one of my favorite ways to use it. Recently, I wondered if I could do the same thing I did for my margarita jello shots and use lime rinds to serve the sorbet. It worked perfectly and they really look like mini watermelons, don’t they?

The nice thing about this recipe is that you can make your sorbet ahead. When you want to serve it then you can prep the limes and fill them a few hours before you plan to serve them. It does take a little time to prep the limes so if you want to try another version that’s easier you should check out my watermelon sorbet slices.

How to Make the Sorbet

  • You will need two cups of watermelon juice. You can just puree fresh watermelon (without seeds) in your blender or food processor.
  • Combine corn syrup and sugar in a saucepan and heat it up. Once the sugar dissolves add the watermelon juice.
  • Pour the watermelon mixture into your ice cream maker and churn it following the instructions for your machine.
  • Once churned, freeze the sorbet until it’s firm.

How to Prep the Lime

  • Slice the limes in half lengthwise.
  • To remove the flesh, insert a small sharp knife into the white of the rind and run it around the flesh to loosen it from the rind.
  • Using your fingers, pry the flesh from the rind. If you’ve sliced along the white it should come out in one piece leaving the rind completely clean.
  • Wash and dry the rinds thoroughly before filling them with the sorbet.

Scoop the sorbet into the lime shells and use a knife to level the tops so they are even. I used chopped chocolate to create the watermelon seeds or you can use mini chocolate chips. Place all of them on a baking sheet, cover them with plastic wrap, and refreeze them until the sorbet is set again.

Watermelon Sorbet in Lime Shells

These mini sorbets are perfect for a party, bbq, or just a regular summer day.

Ingredients

  • 2 cups watermelon juice
  • 3 tbsp sugar
  • 1/8 cup corn syrup
  • 6 limes
  • mini chocolate chips

Instructions

  • Heat corn syrup and sugar in a small saucepan until sugar is dissolved. Blend into watermelon juice. Pour mixture into ice cream maker and make according to manufacturer instructions. Place in freezer to further solidify the sorbet. 
  • After sorbet is ready, prepare limes. Slice limes in half, lengthwise. Using a sharp knife, cut into white portion of lime to carve out flesh. Use hands to pry out flesh from lime. If you are in the white area, you should be able to pry it out in one piece and leave shell completely clean. Wash and dry shells before using. 
  • Scoop sorbet into limes and smooth surface with a spatula. Add chopped/mini chocolate chips to surface so it resembles watermelon seeds. Smooth out sorbet again. Cover limes with plastic wrap or place in container and refreeze until ready to serve.

  3. question: what do you use for watermellon juice? Do you buy some, or make it yourself? If so, how do you get it to keep that bright red colour? Thanks 🙂

    • I used fresh watermelon. I bought a small personalized one and turned it into juice with my blender. And the color was just the natural color of the watermelon. Since the sorbet doesn’t have anything added other than sugar and syrup, it stays a bright red just like the flesh.

  5. These sorbets look amazing! I love the ones you get from costco that are in fruit shells like this, coconut shell, orange, lemon, etc. This looks like the perfect way to make a homemade version. DELICIOUS!

    • You should get one! I’m sure you could make lots of fun stuff with TC. If you do think in investing in one, I have the Cuisinart and I love it.
