Avocado Coconut Mousse

I’ve made sweetened avocado desserts in so many ways now, why not a mousse? This avocado mousse recipe is only 3 ingredients (another two for the whipped cream garnish).
My favorite way to make mousse is with silken tofu. I decided to try it with the avocados too. While making this, I worried about it not working and wasting an entire perfectly good avocado. Luckily it came out just as I would have hoped.
And to top it off, I added some coconut whipped cream, giving it a real tropical feel.
Avocado Mousse with Coconut Whipped Cream
8 oz of ripe avocado flesh (about 1 large hass avocado)
8 oz silken tofu (can also use soft tofu. don't use firm as the texture is too grainy)
4-5 tbsp of condensed milk (depending on how sweet you want it)

Combine all ingredients into a food processor and blend at high speed until smooth batter and no avocado chunks remain. Scoop into ramekins and refrigerate for several hours to set. Top with coconut whipped cream before serving.
