4 Ingredient Mini Eggnog Muffins

These easy mini muffins have a hint of eggnog and need just 4 ingredients. A perfect breakfast surprise for your loved ones.

These eggnog muffins are so simple. You can easily mix the four ingredients by hand and without a mixer. I love the cute mini shape too.

A few weeks ago, I bought some eggnog ice cream from Trader Joe’s. I’m not much of a fan of drinking eggnog, but I like desserts and drinks that are lightly flavored with eggnog. The Trader Joe’s ice cream has a very strong eggnog flavor, almost like drinking eggnog. That’s great for eggnog lovers, but not for me. So I made muffins with the ice cream.

You can leave them plain, but I think the glaze makes these extra moist and really brings it all together.


The mini shape is dangerous. I couldn’t stop popping them in my mouth.

Mini Eggnog Muffins


For the muffins:
1 1/2 cups eggnog ice cream, melted (make sure you use a full fat ice cream that has a custard/egg base)
1 cup all purpose flour
1/4 cup light eggnog
2 tsp baking powder
(if you aren't going to add glaze, I'd recommend adding some additional sugar to the batter. This batter is only mildly sweet as is)

For the glaze:
1 cup powdered sugar
1-2 tbsp light eggnog


1. Preheat oven to 350F. Melt ice cream in microwave for about 30-50 seconds. Add in flour, baking powder and light eggnog. Mix with a large wooden spoon until batter is thick and smooth. Line mini muffin pan with mini liners. Scoop batter in, about 3/4 full. Bake for about 9-10 minutes or until toothpick inserted comes out clean.
2. While mini muffins are cooling, make glaze. Add sugar and 1 tbsp of eggnog and whisk with a fork. If too thick, add an additional 1 tbsp of eggnog and whisk until smooth. When muffins are cool, dip tops in glaze.
