Mini Quiche

Mini quiche is an easy bite-sized breakfast that you can make with premade dough and your favorite quiche fillings. This version has eggs, broccoli, ham, and cheese and is baked in a mini pan for a dish that is great for breakfast, brunch, and meal prep.

Over the weekend I made some mini quiche, making quite a few so that we have some extras to bring to work for breakfast during the week.

I had some leftover ready-made pie crust from my mini pecan pies and I was trying to figure out what to do with it and came up with the idea to make mini quiche. These are small, easy to carry, and bite-size so you can just pop them in your mouth.

I filled mine with ham, broccoli and Swiss cheese, but you can mix in other add-ins like other proteins, veggies, and cheeses. These are really easy to put together and you can also serve them at a brunch or party.

Ingredients

  • Refrigerated pie dough
  • Eggs
  • Milk
  • Finely chopped broccoli
  • Diced ham
  • Shredded Swiss cheese
  • Salt and pepper

Substitution: If you want richer mini quiche, use heavy cream or half and half instead of milk. You can also use your favorite homemade pie crust instead of store bought.

Recipe Instructions

Whisk the eggs in a bowl and then add the milk, broccoli, ham, cheese, salt, and pepper. Whisk again so they are well combined.

Grease a mini muffin pan or mini tartlette pan with butter or cooking spray. Roll out the pastry crust and cut rounds that are a little bigger than the muffin cups. I used a glass rim to cut out mine or you can use a cookie cutter.

Fit the dough into the molds and then fill each with about one tablespoon of the egg mixture. They should be about ¾ full.

Bake the mini quiche in the oven for about 15 minutes at 375°F. They are done when the crust is a light golden brown and the filling is cooked through and set.

Recipe Tips

Since these are mini quiche, it’s important to chop the ingredients for the filling so they are small. So, for the broccoli and ham be sure to finely chop or dice them.

Once you’ve baked them you can enjoy them warm or at room temperature. You can also chill them in an airtight container in the refrigerator for three to four days and enjoy them cold.

You can experiment with other fillings like finely chopped bell peppers, mushrooms, fresh herbs, green onions, or spinach. Instead of ham you could try crumbled bacon or sausage. Cheddar cheese, gruyere, pepper jack, feta cheese or other types of cheese that you like would work well.

  • 1 pre-made pie crust
  • 2 eggs
  • 1/4 cup milk
  • 1/4 cup broccoli chopped finely
  • 1/4 cup ham diced into small cubes
  • 1/4 cup shredded swiss cheese
  • salt and pepper to taste

Instructions

  • Preheat oven to 375°F. Whisk eggs in a medium bowl. Then add in milk, broccoli, ham, cheese, salt and pepper. Whisk together to incorporate ingredients.
  • Grease mini muffin pan or mini tartlette pan. roll out pie crust and using a round glass rim that is slightly bigger than the size of your mini molds, cut circles. Place circles into mini molds, pressing dough into the mold. Pour about 1 tbsp of batter into each mini quiche mold, or until about 3/4 full. Cook in oven for about 15 minutes or until eggs are cooked and pie crust turns a light brown.

  1. All right, something to make with my Trader Joe’s pie crust (best pre-made pie crust ever!)! I just made some mini pot pies using the crust from leftover pot roast. I like how cute your quiche looks too! 🙂

    • Nope! Just add the filling and bake. They are so small so the pie crust cooks in the 15 minutes it’s in the oven.
