Single Serving Microwave Matcha Cookie

This single, soft, matcha green tea flavored cookie cooks in 50 seconds and takes less than 5 minutes to make! If you want a quick cookie, this microwave matcha cookie will satisfy your craving.

It’s been hot hot hot this week. A few days ago, I was in Europe and freezing. I was longing for the warmer San Diego weather. I guess I should be careful what I wish for…

I can’t remember the last time it was this warm in April or May. I was desperately craving a cookie, but turning on the oven was out of the question. So, I decided to make one of my microwave cookies.

I’ve made a lot of microwave recipes and this time I made a microwave matcha cookie. It’s a really easy way to satisfy a cookie craving when you don’t want to spend time making a whole batch of cookies.

I love the lovely hue of green of this cookie. When you bake cookies in the oven, they brown, which muddles the matcha color. But since it cooks in the microwave, it stays a vibrant green.

The cookie was soft, sugary, and delicious. You won’t even break a sweat making it. It’s a perfect treat for one.

Ingredients

  • Butter
  • All-purpose flour
  • Granulated sugar
  • Egg
  • Matcha powder

How to Make a Microwave Cookie

Whisk the ingredients in a small bowl. Line a large round microwave-safe plate with parchment paper.

Scoop the batter into the middle of the plate. The batter will be quite wet but you should be able to pour the cookie batter so that it forms a round disk, like a cookie shape or a thick pancake. Smooth surface with a spatula if needed.

Microwave the cookie for about 50 seconds. Be careful not to overcook it, as it will make the cookie hard in the center. Cool the cookie for a few minutes before eating.

Ingredients

  • 1 tbsp unsalted butter melted
  • 3 tbsp all purpose flour
  • 2 tbsp granulated white sugar
  • 1 tbsp whisked egg
  • 1/4 tsp premium grade matcha powder (see note)

Instructions

  • Whisk all ingredients into a small bowl until smooth batter forms. Line a large round microwave-safe plate with parchment paper. Using a small spatula, scoop out batter into middle of the plate. The batter will be quite wet but you should be able to pour the cookie batter so that it forms a round disk, like a cookie shape or a thick pancake. Smooth surface with spatula if needed.
  • Cook in microwave for about 50 seconds. Careful not to cook longer, as it will make cookie hard in the center. Let cookie cool a few minutes before eating.

Notes

For the matcha green tea, the higher the quality, the better the green color. I like Maeda-En gold canister quality.

  2. I found this recipe this afternoon and I’ve made it twice since… it is so simple and forgiving! I hardly have any baking ingredients at home (not even brown sugar), but I did happen to have some matcha powder. Warning: since it’s made in the microwave, it doesn’t have that perfect balance of crunchiness and chewiness, but it is super soft and great as a snack. However the 50 second microwave time wasn’t enough for me, so what I did was I put it back in for 20 seconds. I recommend eating it really warm, with a bit of kosher salt on top. I am so impressed with this recipe!

  4. Thanks for the recipe! Just the right size to satisfy my dessert craving without the temptation to overindulge if I had made a full batch of cookies. 
    In case this is helpful for anyone else:
     I substituted with almond flour since it’s all i had on hand and it worked just fine!
     Also when I make it again I’ll try a tad less sugar (I find most desserts too sweet). 

  5. yum that looks super yummy! speaking of how the oven tends to brown matcha, what do you suggest to make the matcha appear more vibrant for oven baked goodies?

    • the only thing I’ve found to help is to use high quality matcha powder. The premium stuff has a very good dark green hue to start with so it doesn’t brown as much.

    Just out of curiosity- what do you do with the rest of the egg in these recipes? Or do you make a few to use up the whole egg?

    • Sometimes I use it up, making more than one version during recipe testing. Other times, I just cook it and eat it!
