One of my new favorite football game day foods is tater tot nachos which some people also refer to as totchos. I don’t actually follow much football, but I like eating the snacks associated with watching the games. I was craving totchos the other day, but was completely out of frozen tater tots. And that’s when I came up with the solution to use my cauliflower tots.

These came out so tasty. No it’s not quite the same as the original, but it’s healthier and still addicting. Mr. K and I polished off a huge platter of them in no time. I can’t wait to make them again for the next time I pretend to watch football. You could also use my Sweet Potato Tots or Broccoli Tots to make these totchos, too!

Speaking of watching things, I recently started watching Veep and I’m really enjoying it. I love the quick dialogue and humor. We did a marathon of the first season with my Amazon Prime account this weekend and now I’m debating whether to subscribe the HBO app to watch the rest.

Cauliflower Tot Nachos

Tater tot nachos (aka Totchos) are made slightly healthier with the substitute of cauliflower tots. This recipe makes about 5 dozen tots to serve as nachos.

Ingredients

  • 3 cups finely chopped cooked cauliflower approximately 1 head of cauliflower
  • 1 cup Italian seasoned panko breadcrumbs (see note)
  • 1 cup shredded cheddar cheese
  • 2 eggs

toppings

  • 1 cup shredded cheddar cheese
  • 1 tbsp chopped cilantro
  • 2 tbsp chopped scallions
  • 1/3 cup chopped tomatoes seeds removed

Instructions

  • To prepare the cauliflower, first boil florets until just soft. Drain and dry thoroughly with a paper towel. Then pulse briefly in a food processor until it resembles course crumbs.
  • Add cauliflower, breadcrumbs, cheese and eggs into a large mixing bowl. Mix until everything is combined.
  • Preheat oven to 400°F. Line two large baking sheets with parchment paper or silicone baking mats. While oven is preheating, scoop up 1 tbsp of cauliflower mix and squeeze between palm of hands. If there is excess water that squeezes out, that is fine. Roll cauliflower between palm of your hands to form cylinder. Gently shape with fingers until it resembles tater tot cylinder. Place on baking sheet lined with parchment paper or silicone baking mat. Repeat with remaining cauliflower mix. You should have enough to form about 5 dozen tots.
  • Bake for about 20 minutes. Bottom of tots should be brown. Flip tots over and bake for another 5-10 minutes.
  • Remove tots from oven. Pile onto large oven-safe plate or bowl. Top with shredded cheese and any other topping ingredients you want to be served hot. Put back in oven until cheese is melted. Remove from oven and top with other topping ingredients (cilantro, scallions, tomatoes, etc) and serve.

Notes

  • Make sure you used seasoned panko. If you use plain panko you will need to season them otherwise your tots will be very plain.
