Watermelon Lime Ice Pops

During the summer, my mom always buys a lot of watermelon and makes us fresh watermelon juice to go with our meals. When I started making my own, I added just a touch of lime juice. And that gave me this idea to make watermelon ice pops that look like watermelon.

The main layer of the ice pops is pure watermelon juice. It’s like eating frozen watermelon on a stick and it’s been perfect during these hot summer days. The thinner layer is lime juice. I was able to juice my entire lime –rind and all– with my Vitamix, which is why it has such a pretty color. If your blender isn’t quite as powerful, you can just use the juice of the lime.

These were fun and easy and completely gone within a few days.

You can also make these using yellow watermelon, too!

Watermelon Lime Ice Pops

Servings: 7 (3 oz) popsicles
Prep Time: 10 minutes

These ice pops are made of watermelon juice and lime juice and layered to resemble real watermelon slices. They are light, refreshing and thirst quenching.

Ingredients

  • 2 cups fresh watermelon juice
  • 1 whole lime washed and cut into fourths and seeds removed
  • 3 oz water
  • 3 tbsp sugar

Instructions

  • Fill popsicle molds 3/4 full with watermelon juice. Let freeze for several hours until set.
  • In a powerful blender, like a vitamix, add lime, water and sugar. Blend on high speed until lime is completely pureed and the lime juice puree is uniform in color. Taste and add more sugar if needed. If you don't have a powerful blender, you can make the lime juice puree without the lime peel, but your puree won't be as green.
  • Fill the popiscle cavities the rest of the way with the lime juice. Freeze for several hours until set.
