I can never resist ordering garlic butter noodles whenever I see them offered on a restaurant menu. But they are also super easy to make at home.

With Chinese New Year’s coming soon, I’ve been planning my menu and trying to decide what noodle dish to make. I’m definitely considering this garlic noodle recipe.

Ingredients

  • Fresh egg noodles
  • Unsalted butter
  • Minced garlic
  • Maggi Seasoning Sauce
  • Fish sauce
  • Brown sugar
  • Oyster sauce

Egg noodles: I like to use fresh egg noodles, which are available at most Chinese grocery stores. If you can’t find them, you can use other types of noodles or even pasta, like spaghetti. If you use pasta, the noodles won’t be as chewy as fresh egg noodles, but it will work. If you use dry noodles or pasta, you should use enough so it totals one pound after it’s cooked.

Maggi seasoning sauce: This is a key ingredient for this recipe. It’s a common ingredient found in a lot of Asian recipes, especially Vietnamese ones. It’s fairly easy to find in grocery stores or on  Amazon.* It tastes similar to soy sauce but with much more depth.

Garnishes: I like chopped parsley and Parmesan cheese as garnishes, but you can also use scallions or green onions,

a bottle of Maggi seasoning

Boil the noodles in a medium-sized pot until they are al dente. Drain and set them aside while you make the sauce.

Melt the butter in a small saucepan over medium heat. Add the garlic and cook it in the butter until it’s fragrant. This will only take a minute or so. Add the rest of the sauce ingredients and stir to combine.

Place the cooked egg noodles in a large bowl. Pour the garlic sauce over the top and toss to coat the noodles.

The garlic noodles look quite plain, so I garnish them with some fresh parsley and some grated Parmesan cheese. The noodles are best served hot while the garlic butter sauce is still warm.

Ingredients

  • 1 lb fresh egg noodles (see note)
  • 2 tsp finely chopped parsley
  • 2 tbsp grated Parmesan cheese

Garlic sauce

  • 4 oz unsalted butter
  • 2 tbsp minced garlic approx 6-8 garlic cloves
  • 1 tbsp Maggi Seasoning Sauce (see note)
  • 1/2 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1/2 tbsp oyster sauce

Instructions

  • Fill water into a medium pot and bring to a boil. Add noodles and cook until al dente. Drain and set aside.
  • In a small saucepan, add butter. Bring the pan to medium heat and melt butter. Add in garlic and cook a few minutes until the aroma of the garlic comes out and garlic is lightly cooked. Add in remaining sauce ingredients and stir until fully mixed in.
  • Add noodles to a large bowl. Pour sauce over noodles. Toss until noodles are evenly coated in sauce. Garnish with parsley. Dish out noodles and top with parmesan cheese. Noodles are best consumed warm.

Notes

  • Slightly adapted from Rasa Malaysia
  • You can make this with a variety of noodles including spaghetti noodles but I prefer to buy fresh egg noodles as they have a more chewy texture. If you start with dry pasta, you should only measure out enough dry pasta to yield 1 lb of cooked pasta for the recipe.
  • Fresh egg noodles are sold at most Chinese grocery stores.
  • Fish sauce can vary quite a lot depending on the brand. I highly recommend using Red Boat fish sauce.* It's the only one I use to cook with as many other brands I've tried are overly salty and not nearly as flavorful.
  • Maggi Sauce is available at most grocery stores and on Amazon*.

  1. Totally in love with this recipe. I substituted the fish sauce for light soy sauce (I don’t eat/use fish products); it was so very tasty, will definitely be making time and time again.

  2. Hi Jennifer,
this is delicious, I have tried this before with garlic and hot spices, I prefer yours.
Thank you so much, everything you have send was fantastic.
    Johanna.

  3. nice recipe i am trying to home make that

  4. Taste really good!!! Love it

  5. Loved this recipe ever since I first saw it last year, and has happy to be reminded of it today. This time, I let the butter brown a bit before adding the rest (browned butter RULES, imho ?) and fell in love all over again! Thank you for yet another quick, smart, and DELICIOUS recipe. ???

    • I’m so happy you love this recipe and happy that the reminder helped. I have tried it with browned butter too and I agree it makes it even better!

  6. Does the Parmesan Cheese give this dish a cheesy flavor? Would it still be delicious without the cheese? My goal is to taste the garlic flavor.
    Thanks!

    • You will definitely taste the garlic. There is only a little cheese in here and it doesn’t really give the noodles a cheesy flavor. Parmesan has a lot of umami so it just gives the dish a little extra flavor boost.

  7. Thanks for the credit. I have sooooooooo many recipes being ripped off by food bloggers who don’t have the courtesy to cite credit. I appreciate it.

    • So sorry to hear that! I’ve definitely seen that as a growing trend where people don’t give credit anymore. It’s definitely frustrating! Love your recipes. You’re always one of my go-to blogs for Asian recipes.

  8. Wonderful dish, was very flavorful.

  9. These noodles look amazing! and that garlic sauce…..wow, this is something I need in my life! thanks for the recipe 🙂

  10. Looks yummy and so easy to make! Apparently, there are flavor differences in Maggi seasoning from different countries. My family prefers the Maggi from Europe; the label has Europe on it and it’s more expensive than the “regular” Maggi.

    • When I was writing this post, I discovered that too! I had no idea before. Now I want to try all the different variations and compare.
