Garlic Zucchini Noodles

A lighter version of Asian-style garlic butter noodles. Spiralized zucchini noodles are cooked in a flavorful garlic butter sauce. These garlic zucchini noodles are an easy dish that comes together in less than 30 minutes.

Last month I shared with you my Asian-style garlic butter noodles recipe. The sauce is simple but very flavorful and addicting. We eat garlic noodles a lot, but I wanted to try lightening it up by using zucchini noodles instead. And I am really happy with the result!

This low-carb version is just as tasty but lighter. It’s so easy to make and can be served as a light lunch or as a base to accompany your main dish.

Ingredients

  • Olive oil, canola oil, or vegetable oil
  • Spiralized zucchini
  • Unsalted butter
  • Minced garlic cloves
  • Maggi Seasoning Sauce
  • Fish sauce
  • Brown sugar
  • Oyster sauce

Cooking Tips

  • Saute the zucchini noodles in a pan with oil. I cook them until they are half done. This prevents them from overcooking once you add them to the sauce.
  • I cook the sauce in a small saucepan and then add it to the cooked zucchini in the other pan.
  • Once you’ve combined the sauce and zoodles, it’s ready to serve.
  • I use the Paderno World Cuisine Vegetable Spiral Slicer* to make zucchini noodles.
  • Maggi Sauce is available at most grocery stores and on Amazon.* If you do not wish to purchase maggi sauce, you can use soy sauce. Maggi sauce is more flavorful than regular sauce soy, so it won’t be quite the same but the sauce should still taste good.

Variations

You can add a protein like cooked chicken, shrimp, beef, or crispy tofu would be good, too.

Feel free to add cooked vegetables like broccoli, mushrooms, and bell peppers. For a kick of heat, try adding red pepper flakes or sriracha to the sauce.

A lightened up version of Asian-style garlic butter noodles. Spiralized zucchini noodles are tossed in a flavorful garlic butter sauce.

Ingredients

  • 1 tbsp olive oil or canola oil
  • 1 lb zucchini spiralized

GARLIC SAUCE

  • 2 oz unsalted butter
  • 1 tbsp minced garlic approx 3-4 garlic cloves
  • 1/2 tbsp Maggi Seasoning Sauce
  • 1 tsp fish sauce
  • 1/2 tbsp brown sugar
  • 1 tsp oyster sauce

Instructions

  • Add oil to a large skillet and bring to medium high heat. Add in zucchini and cook until about half-way done. Drain skillet of any water released from zucchini. Set aside.
  • In a small saucepan, add butter. Bring pan to medium heat and melt butter. Add in garlic and cook a few minutes until the aroma of the garlic comes out and garlic is lightly cooked. Add in remaining sauce ingredients and stir until fully mixed in.
  • Pour sauce into skillet with zucchini. Cook zucchini in sauce over low to medium heat until zucchini is tender and has absorbed the flavors from the sauce. Dish out noodles and serve warm.
