Creamy Vegetable Soup

This creamy vegetable soup is very simple, but it’s hearty and full of vegetables. Unlike a cream-based soup, the broth is lighter, with just enough milk added to give it a light creamy flavor and texture. This recipe is the one my mom made for us growing up and it’s still one of my favorite vegetable soup recipes to make.

A lot of my recipes are inspired by the ones my mom made for us growing up and this creamy vegetable soup is one of my favorites. It has lots of vegetables, a light broth and a touch of creaminess from some milk that is added at the end of the cooking time. I like to make this soup when it’s cold or when I’m feeling under the weather. It’s always comforting and delicious.

It’s not a heavy soup like other creamy soups that are made with flour and cream to thicken the broth and I think that’s what I like best about it. It’s nice as a light lunch or dinner with some bread on the side. It’s also very easy to make.

Ingredients

  • Chicken broth
  • Potatoes
  • Carrots
  • Onion
  • Cabbage
  • Green Beans
  • Whole milk

You want to make sure all of the vegetables are cut into a similar size so they cook evenly.

All you do is add all of the vegetables and chicken broth in a large pot. Bring it to a simmer, cover the pot, and let the vegetables cook in the broth until they’re tender.

I like to keep the lid slightly askew on the pot so it doesn’t boil over. Once the vegetables are tender add the milk and stir to combine.

What kinds of potatoes are best for soup?

I prefer a waxy potato for soup because they keep their shape better as they simmer. Yukon golds are a good choice. Starchier potatoes, like russets, tend to break down when they’re simmered so I would avoid those.

Can I use a different kind of milk?

I think whole milk is best for this vegetable soup because it has a higher fat content but isn’t as thick or rich as cream. If you use 2% or fat-free milk you’ll miss out on the creaminess, so I wouldn’t use those. I haven’t tested this recipe with non-dairy milk so if you try it please let me know how you liked it in the comments.

Can this vegetable soup be made ahead?

Yes, you can make this soup ahead if you leave out the milk. So, simmer the vegetables until they are tender and then store the soup in an airtight container. It will keep in the refrigerator for up to three days or you can freeze the soup for up to three months.

When you are ready to reheat the soup, bring it to a simmer and then add the milk before you serve it.

Mom’s Creamy Vegetable Soup

This is a soup we ate often growing up. It’s loaded with fresh vegetables and some milk added at the end of the cooking time adds a lot creaminess.

Ingredients

  • 3 1/2 cups chicken broth
  • 2 potatoes cubed
  • 2 carrots cubed
  • 1/2 brown onion diced
  • 1/4 head of cabbage diced
  • 1/2 cup green beans cut into similar length of other ingredients
  • 1 cup whole milk

Instructions

  • In a large pot, add chicken broth, potatoes, carrots and onions. Bring to medium boil and then simmer for several minutes until vegetables are tender. Put the lid on to keep the soup from evaporating, but keep the lid slightly ajar so that the broth does not boil over.
  • Add in cabbage and green beans and cook a few more minutes. Add salt and pepper to taste. At the very end, add in the milk. Bring to a low boil and then turn off heat. Serve immediately.

  33. I have a delicious recipe for ham and potato soup that a friend gave to me. It is very easy and the great thing about it is that you can add additional ingredients, more ham, potatoes, etc and it still turns out great.

    Combine 3 1/2 cups peeled and diced potatoes, 1/3 cup diced celery, 1/3 cup finely chopped onion, 3/4 cup diced cooked ham and 3 1/4 cups water in a stockpot. Bring to a boil, then cook over medium heat until potatoes are tender, about 10 to 15 minutes. Stir in 2 tablespoons chicken bouillon granules, salt and pepper to taste. In a separate saucepan, melt 5 tablespoons butter over medium-low heat. Whisk in 5 tablespoons all purpose flour with a fork, and cook, stirring constantly until thick, about 1 minute. Slowly stir in 2 cups milk as not to allow lumps. Continue stirring over medium-low heat until thick, 4 to 5 minutes. Stir the milk mixture into the stockpot, and cook soup until heated through. Serve immediately.

  42. When I was a kid, I used to help my grandma cook and bake a lot. I learned so much from her! One of her best, and my favorite, recipes was for her creamy wild rice soup. Heavy cream and milk made it so creamy and delicious!

  49. A recipe that has been passed down to me in my family is ham & cheese crepes, they are just so delicious and can be frozen!
    Recipe as follows
    • 2/3 cup cold water 
    • 2/3 cup plus 4 to 6 tablespoons cold milk, divided 
    • 1 cup all-purpose flour 
    • 2 eggs 
    • 1/4 cup butter, melted 
    • 1/4 teaspoon salt 

    • 1 to 2 tablespoons Dijon mustard 
    • 8 thin slices deli ham 
    • 1 cup (4 ounces) shredded cheddar cheese 

    • •  In a blender, combine the water, 2/3 cup of milk, flour, eggs, butter and salt. Cover and process until smooth. Refrigerate for 1 hour. Add remaining milk if batter is too thick. 
    • •  Heat a lightly greased 8-in. nonstick skillet over medium heat; pour 3 tablespoons batter into the center of skillet. Lift and tilt pan to coat bottom evenly. Cook until top appears dry; turn and cook 15-20 seconds longer. Remove to a wire rack. Repeat with remaining batter, greasing skillet as needed. When cool, stack crepes with waxed paper or paper towels in between. Cover and freeze for up to 3 months. Yield: 16 crepes. 
    • •  To use frozen crepes: Thaw 8 crepes in the refrigerator for about 2 hours. Spread each with mustard; top with a slice of ham and sprinkle with cheese. Roll up tightly. 
    • •  Place in a greased 11-in. x 7-in. baking dish. Bake, uncovered, at 375° for 10-14 minutes or until heated through.

  50.  My Aunt make this decadent custard tart every year at our Christmas family gathering.  The silky custard is made with whole milks, eggs, sugar; all baked in a buttery crust.  I now make it for my kids from time to time at home.  It’s probably my favorite dessert to enjoy.

  68. My mom’s turkey meat lasagna is a recipe that we’ve enjoyed for years. When I got married, she included the recipe in a box for me to try out in my new home.

    Directions

    Pour into a greased 13-in. x 9-in. baking dish. Crumble bacon and sprinkle on top. Bake, uncovered, at 325° for 40-45 minutes or until knife inserted near the center comes out clean. Let stand for 5 minutes. Yield: 8-10 servings.

  71. My mom is lactose-intolerant so even when she made things from scratch, they didn’t include dairy. My dad was a lazy cook, so on nights when mom was working, he browned some turkey, melted cheese into gravy and added canned mushrooms. The one time he tried to make it from scratch. he used powdered sugar instead of flour in the gravy. The weird thing is he ate it.

  78. My Mom made the best Hush Puppies when I was growing up. She got the recipe from her Mom, and I also made them when I was growing up, and now make them with my daughter! We use buttermilk in my Hush Puppies!
