Flourless Nutella Muffins

I’m in love with these easy muffins. I made them Sunday morning and was popping them in my mouth all day. Until there were none left. Oops.

I know minis are supposed to be better because they are smaller and less guilt, but that doesn’t really work for me. I end up eating way too many because they are so small.

These muffins are so ridiculously easy. When I finished making the batter, I had to double check that I didn’t leave something out because the batter just didn’t look ready.

But it was. And when I finished baking, out came these cute Nutella muffins.

They don’t puff up as much as regular muffins do because they don’t have any flour. Instead, they sink in quite a bit. But the inside has a cakey/muffiny texture even without the flour.close-up photo of a muffin bitten in half with others in the background

Flourless Nutella Muffins

Servings: 12 mini or 5 regular
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes
Course: Breakfast, Snack

These muffins are so ridiculously easy to make and so addictive! 

Ingredients

  • 1/4 cup Nutella
  • 1 medium overripe banana
  • 1 large egg
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon baking powder

Instructions

  • Preheat oven to 350°F. Line mini muffin pan with mini muffin cups. You can also make full sized ones. Combine all ingredients together and whisk by hand until banana is completely mashed and blended into the batter and no chunks remain. If your banana is not extremely ripe, you may want to food process it first.
  • Pour batter about 2/3 full into each muffin liner. Bake for about 10 minutes for minis and about 20 minutes for full-sized ones, until toothpick inserted comes out clean.

  2. These muffins are amazing(ly easy)! DD and I ate the whole first batch so I made a double batch immediately after. I added a little coconut flour to thicken them up a bit. I had sinking issues too, but I used the oven thermometer with the second batch so I know the oven wasn’t too hot. I’m thinking I may need new baking powder since that seems to be the only other applicable explanation per https://www.momables.com/why-do-cupcakes-sink/.

    • glad you like these! some sinkage is normal for these. if you see my photo, they do sink in the middle, but they are delicious aren’t they?

  3. I just made these and baked for 10 minutes – they sunk a lot (way more than your pic) and are very moist inside. (Still delish) Any suggestions? Should I bake them longer next time?

    • There’s 2 things I would try: you can add a little more batter into each one so that there is less sinkage since it is fuller to start with. And I would also try adding slightly longer baking time too, maybe increasing 1-2 minutes. hope this helps!
