Froyo Mochi Ice Pops

These colorful popsicles are made of sweet frozen yogurt and bright mochi pieces that you find at a frozen yogurt shop. It’s a froyo experience on a stick!

Summertime means a lot of frozen yogurt. My favorite toppings to add at frozen yogurt shops are the colorful chewy mochi bits. And yes, it has to be the color variety because the plain white ones just don’t entice me. And I only eat the blue, pink and green ones. The yellow and white ones go to Mr. K, my human garbage can.

So I whipped up these frozen yogurt bars and embedded them with the colorful chewy mochi pieces. I love how these came out. They taste like just the frozen yogurt I get at the froyo shops and they are really fun to eat, especially the mochi pieces which retain their chewy texture.

I was inspired to make these after seeing a matcha and mochi popiscle combination on Thrillist.

I found the mochi at the Costco Business Center. I love going to that place. It has so many cool restaurant items and hard-to-find candies. If you have a Costco Business Center near you, I definitely recommend checking it out. I’ve also see the plain white ones at some Asian markets.

Froyo Mochi Ice Pops

Servings: 6
Prep Time: 10 minutes

Like frozen yogurt in popsicle form. Sweet yogurt with colorful chewy mochi pieces embedded inside.

Ingredients

  • 16 oz plain nonfat greek yogurt
  • 3/4 -1 cup granulated white sugar depending on taste
  • 1 package of mochi pieces you will need about 15 pieces per ice pop

Instructions

  • Add yogurt and sugar into blender and mix on high speed until fully blended and yogurt reaches desired sweetness. Fill your popsicle molds 3/4 full with yogurt. Then add 12-15 mochi pieces into each one. Use a fork to push the mochi pieces down and to the sides of the mold so that they visible. Try to evenly spread them across the entire popsicle.
  • Bang the bottom of the ice pop molds against a hard surface to settle the yogurt and eliminate any air pockets. Add in popsicle sticks if you haven't already. Freeze overnight and remove according to manufacturer's instructions (it usually involves running the molds under warm water for a few minutes until they loosen).

  2. Oh, how very cute and fun looking this is!!!! My daughter would love it. We still have popsicles with cut up fruit in our popsicle molds. Until that gets finished, I won’t be able to make these…yet!  Great idea!
