Nutella Palmiers

Palmiers are easy to make with store-bought puff pastry dough. For this version, I filled them with Nutella for a chocolate and hazelnut twist. They taste like a chocolate croissant and are very easy to make.

I recently bought some puff pastry and decided to try making palmiers. I’ve seen them before and they look very simple to make if you have premade dough.

I didn’t want to make regular ones, though, and opted to add Nutella because it’s one of my favorite baking ingredients. I love giving things a Nutella twist.

What are Palmiers?

Palmiers are a type of French pastry that get their name from the shape. Puff pastry is rolled in a way so when it’s sliced the pieces look like palm leaves.

Palmiers are often made plain or filled with different things like melted chocolate, jam, or even savory ingredients. They taste similar to croissants because they are light, flaky, and buttery.

They’re actually easy to make at home because frozen puff pastry is so readily available.  For this palmier recipe, I opted to fill mine with Nutella after finding a recipe on My Baking Heart. But I just kept mine simple with Nutella and skipped the chopped hazelnuts.

Ingredients

  • Thawed puff pastry
  • Nutella

It’s important that your dough is thawed but still cold. Follow the thawing instructions on the package which usually instruct you to thaw it in the fridge.

How to Make Nutella Palmiers

Roll out the puff pastry on a lightly floured work surface. You should roll it into a rectangle approximately 15×9”.

Spread the Nutella in an even layer over the top.

Starting at one end, roll the pastry to the center. Roll the other end to meet it in the middle. Dampen the edges where the rolls meet to seal them.

Slice the dough cross-wise into 1/3” pieces and place each of them on a prepared baking sheet.

Bake the palmiers for 10 to 15 minutes at 425°F or until they are golden. Transfer them to a baking rack to cool before serving.

Fully cool them and then store them in an airtight container.

I was very pleased with how these Nutella palmiers turned out. Flakey, buttery, and each bite has a taste of Nutella. I’m excited to try other versions – I think you could do a lot of variations with chocolate and other fillings.
