Do you ever just want a single serving pancake? I do all the time. I’ll be desperately craving a pancake, but too lazy to mix up the batter and make a whole batch on my griddle.

This single serving microwave mug pancake solves my problems. One fluffy pancake ready in less than a minute.

I made it in a mug, but because it doesn’t rise as much as a cake, it would be hard to see in the mug. So I used a spoon and it easily popped out. You can also make it in a ramekin instead of a mug since it is so small.

Of course I had to drizzle it with some syrup and add some strips of bacon. I used the precooked Costco bacon to keep it super easy.

This version uses Bisquick. I’m working on trying to make one with all purpose flour so stay tuned. The mixing goes much faster with Bisquick because you don’t need to get rid of all the lumps, just like when you are mixing traditional pancake batter.

Pancake Mug Cake

Do you ever just want a single serving pancake? This single serving microwave mug pancake is the way to go. One fluffy pancake ready in less than a minute.

Ingredients

  • 1/4 cup Bisquick
  • 1 oz fat free milk, 1/8 cup

Instructions
 

  • In a microwave safe mug or ramekin, whisk Bisquick and milk with a small whisk for a few seconds. It's okay if small lumps remain. Heat in microwave for about 1 minute. Let pancake cool slightly before scooping out of mug and serving with syrup.
