Salted Caramel Mocha Mug Cake

This easy microwave mug cake is inspired by the seasonal salted caramel mocha drink from Starbucks.

I’m not quite sure why Salted Caramel Mocha is a seasonal drink, but I’ve ordered it a few times to change things up from the copious amounts of pumpkin spice lattes I’ve been drinking. This cake is moist, fluffy, with hints of cocoa, coffee and salted caramel. The additional salted caramel drizzle and whipped cream made it even better.

Sometimes a new mug cake creation comes together easily on the first try. This was not quite one of those instances. This one took me about five tries before I finally got what I was looking for.

Mr. K came home to find five half eaten mug cakes and I think the crazy days of recipe testing for the book flashed through his mind. The house smelled delicious though!

Salted Caramel Mocha Mug Cake

This easy microwave mug cake is inspired by the seasonal salted caramel mocha drink from Starbucks.

Ingredients

  • 3 tbsp + 1 tsp all purpose flour
  • 1/4 tsp baking powder
  • 1/2 tbsp unsweetened cocoa powder
  • 1 tsp espresso powder
  • 3 tbsp fat free milk
  • 1 1/2 tbsp + 1/2 tbsp salted caramel sauce I used Trader Joe's brand
  • 1/2 tbsp vegetable oil
  • additional salted caramel sauce for drizzling
  • whipped cream for garnish optional

Instructions

  • Add flour, baking powder, cocoa powder, espresso, milk, 1 1/2 tbsp caramel sauce and vegetable oil into an oversized microwave-safe mug. Mix with a small whisk until batter is smooth and no lumps remain.
  • Add in remaining 1/2 tbsp of caramel sauce and swirl it into the batter, careful not to completely mix it in.
  • Cook in microwave for 1 minute. Top of cake should be dry. Let cake cool before adding whipped cream and drizzling more caramel sauce.

  1. I want to make this now but only have regular caramel sauce. Would it work to just add a pinch of salt?

  2. I am totally obsessed with mug cakes. They are my favourite quick, easy and indulgent treats to make! Definitely going to be creating the recipe… I have never made a mocha flavoured one before!
