Watermelon Sorbet Slices

My simple watermelon sorbet recipe is a refreshing summer dessert. Serving it in hollowed out watermelon rinds is a fun way to serve it for BBQs and other summer parties. It’s easy to do and a fun treat.

I love sorbet during the summer. It’s lighter than ice cream and fruit sorbet is such a nice way to cool off when it’s hot out. I’ve been playing around with a watermelon sorbet recipe the last few weeks and have come up with a few ways to serve it.

What’s cuter than serving it a watermelon? I made mini sorbets in lime rinds a few weeks ago and they look just like mini melons. Well, now I have an even easier version: sorbet slices. Instead of lime rinds, a whole mini melon is hollowed out and I used the same sorbet recipe to fill the rinds. It’s easier to make and just as cute.

How to Serve Sorbet in a Watermelon

  • For this recipe, you will want to get a mini watermelon. A regular one is just too big. Plus, the mini ones are usually a little sweeter than the big ones which is great for making sorbet.
  • Slice it in half and scoop out the flesh. Puree it and use it to make the sorbet.
  • Once you’ve made the sorbet base, you will need an ice cream maker* to churn it.
  • When the sorbet is done, add some chocolate chips which will look like little seeds.
  • Scoop the sorbet into the hollowed-out rinds. I like to add some more chocolate chips on top.
  • Freeze the sorbet in the rinds overnight.
  • To serve, you can enjoy it straight from the rind but what’s even cuter is to slice the halves so they look like watermelon slices.

I think this is such a fun way to serve sorbet and perfect for a summer party. You can make everything ahead and when you’re ready to serve it just slice it. Watermelon juice is so refreshing and it’s so easy to turn into a light sorbet.

Watermelon Sorbet

Prep Time: 15 minutes

During the summer this is a perfect thirst quencher and light dessert that cute to serve, too!

Ingredients

  • 1 mini personalized watermelon
  • 1/4 cup sugar less if you have a really sweet watermelon
  • 1/8 cup corn syrup
  • mini chocolate chips or chopped chocolate

Instructions

  • Slice mini watermelon in half and carefully remove flesh and place into blender. Once the two halves have been scraped clean, set aside. Heat corn syrup and sugar in a small saucepan until sugar is dissolved. Add to watermelon flesh and blend into watermelon juice. 
  • Pour mixture into ice cream maker and make according to manufacturer instructions, adding chopped chocolate at the end. Scoop sorbet back into watermelon shells. Stud surface of two shells with more chocolate to look like seeds. Freeze for several hours or overnight to set.
  • When ready to serve, remove watermelon and use a large sharp knife to slice. You can also eat directly with a spoon from the watermelon bowl.

    I like the presentation in the watermelon shell. Reminds me of how Rendezvous served their mango gelato in a mango half.

    • Yes you should! I think you and TC would have a lot of fun creating your own flavors. I think I got mine for around $40-50 and I’ve used it so many times, so definitely worth it.

  3. This is so adorable. I want to try to make this for a future dinner party. I don’t have an ice cream maker though 🙁 Is there a way to improvise if I don’t have the IC maker?

    • Yes there are, though I haven’t done it myself. It’s much more manual labor. I think it involves freezing, then removing every few hours to scrape and refreeze.
