Tuna Salad Avocado Boats

Tuna salad is stuffed into avocado halves for a fun and healthy meal.

Ingredients:

  • 2 large ripe avocados
  • 2 cans of tuna drained
  • 2 tbsp light mayonnaise
  • 1/2 red bell pepper diced
  • 1 stalk of celery diced
  • juice from half a small lemon
  • salt and pepper to taste
  • 1 tbsp chopped cilantro

Directions:

  1. Slice avocados in half, lengthwise and remove pits. Scoop out about half of the flesh from each half.
  2. Dice the carved out flesh and place in a bowl with tuna, mayonnaise, bell pepper, celery and lemon juice. Mix to combine. Add salt and pepper as needed.
  3. Stuff tuna into avocado halves. Sprinkle with cilantro. Refrigerate for a few hours or serve immediately.
