- 4 tbsp all purpose flour
- 1/4 tsp baking powder
- 2 tbsp granulated sugar
- 1 tbsp tequila
- 2 tbsp fat free milk
- 1 tbsp liquid margarita mix
- 1/2 tbsp fresh squeezed lime juice
- 1/2 tbsp vegetable oil
- 1/4 tsp lime zest
- recommended: make a little frosting by whipping heavy cream with a little concentrated powder margarita mix to enhance the flavors of the cake
Combine all ingredients into an oversized microwave-safe mug. Mix with a small whisk until batter is smooth.
Cook in the microwave for about 1 minute. Surface of cake should be dry and knife inserted should come out clean. Let cake cool a few minutes before eating. Cake is best consumed within a few hours after making.
