- 1 1/3 cup all-purpose flour
- 1 tsp salt
- ½ tsp paprika
- ½ tsp onion powder
- 6 tbsp unsalted butter diced
- 8 oz shredded cheddar cheese
- 2 egg yolks
- 2 tbsp water
Line baking sheets with parchment paper or silpat mats.
Place the flour, salt, paprika, and onion powder in a food processor. Pulse a few times to combine the ingredients together. Add the butter and process until it is incorporated. Add the cheese and pulse again until the cheese is finely chopped. Add the yolks and water and process until a dough ball forms.
Transfer the dough to a work surface and knead it a few times. Divide the dough in half and roll out one half between two pieces of wax paper to a thickness of 3/8”, Peel off the wax paper and cut out crackers using a cookie cutter or stamp. Place the crackers on a baking sheet. Repeat this process with the other half of the dough. Transfer both baking sheets to the freezer for 15 minutes.
Preheat the oven to 325°F. Bake the crackers for 20 minutes. Cool the crackers completely before serving or storing in an airtight container.
