NO BAKE BERRY CLOUD CAKE

(NO FLOUR, EGGS, SUGAR, BUTTER OR OIL)

This unique no bake dessert looks like a cake but feels like you are eating a cloud. It is very fluffy and melts in your mouth. This dessert is just 2 ingredients and doesn’t require any flour, eggs, added sugar, butter or oil.

Easy Recipe

Line an 8 inch square pan with parchment paper. Add berry applesauce and gelatin to a large heat-proof mixing bowl. Whisk until fully incorporated. Heat over a double boiler to dissolve.

Pour into the mixer. Beat with the whisk for about 15 min.  It will more than triple in volume and should look like airy whipped cream. Whisk should hold a soft peak.

Pour into your prepared pan. Spread it evenly. Refrigerate for at least 1 hour to set, keep cool until serving.

Before serving, you can first decorate the cake with whipped cream or other frosting. Slice the cake with a very large and sharp knife.

* The cake doesn’t have much sweetness to it. If you want, you can add sweetener to your frosting.

Recipe Notes

* This recipe must be made with unsweetened applesauce. Sweetened will not work; the added sugar makes it too dense and moist.

Absolutely yummmmy!!!  Very easy to make and a nice light, guilt free dessert. I used mott’s unsweetened pomegranate flavoured applesauce and it turned out perfectly! Will be making all summer.
