CRISPY COCONUT COOKIES

NO FLOUR, EGGS, oil OR butter

These healthy coconut cookies are crispy and sweet. They are an easy cookie to make and need just 2 ingredients.

Easy Recipe

Mix coconut and maple syrup until all of the coconut is evenly coated in maple syrup.

Next, scoop the mixture up with a cookie scoop and place onto a prepared baking sheet.

Bake for about 8-10 minutes, then remove from the oven but leave them on the baking sheet until fully cooled and set.

These cookies are very crispy and a little chewy.

Recipe Notes

This recipe works best with unsweetened shredded coconut. I used 365 Whole Foods unsweetened shredded coconut.
