These soft no bake sugar cookies are healthier than traditional cookies. They need only 3 ingredients and don’t contain any wheat flour, dairy butter, eggs or refined sugar.
Mix oat flour, maple syrup, and melted coconut butter until a soft dough forms. Then scoop out some dough and roll into a smooth ball.
Place the dough balls onto your prepared cookie sheet and press down to form a thick flat disk about 1/4 inch thick.
To make the icing, whisk coconut butter and maple syrup and spread across the surface of the cookies. You can also add sprinkles.
Place cookies into the fridge for about 10-15 minutes to firm up.

Coconut butter can be substituted with regular dairy butter for the dough but it does not work in the icing.
These cookies are soft and lightly sweet and you will also taste the oats.
