Lemon Bread

(NO BUTTER OR OIL)

This easy lemon bread doesn't require any butter or oil. It is sweet, fragrant and a little tart. It's perfect for brunch.

Easy Recipe

 Preheat oven to 350°F (177°C). Line a 9 x 5 inch loaf pan with  parchment paper.

Add lemon juice, zest, eggs and condensed milk to a large bowl. Whisk until fully incorporated. Whisk in flour.

Pour batter into pan. Bake for about 35-45 min. Let bread cool fully in pan. Once cool, drizzle icing on top.

- one medium lemon will produce approx. 1/4 cup (2 oz) of lemon juice and 2 tsp of lemon zest.

Recipe Notes

- To make a drizzle, mix 1 cup of powdered sugar with 1 tbsp of lemon juice

Just made this for the second time. Love how easy it is, and made of just 4 ingredients I generally have on hand. Most challenge part of this recipe has been waiting patiently while it cools!
