These lemon meltaway cookies are crunchy, sweet and melt in your mouth as you eat them. The cookies are easy to make and don’t require any flour or eggs.
Mix together softened butter and condensed milk until completely incorporated and the mixture is smooth.
Stir in the lemon juice, zest, and cornstarch and mix until a soft dough forms.
Scoop dough onto a prepared cookie sheet. Roll into balls, and space them at least one inch apart. Press lightly into 1/2 inch thick disks.
ENJOY!
Bake until puffed and edges are just starting to brown. Let cool and dust with powdered sugar.
* The butter must be completely softened before using. Leave on the counter for a few hours. * Spoon the cornstarch into the measuring cup, to prevent over packing.
